Summer Egg Salad

The weather’s getting warmer and warmer here in Korea. I feel your pain on not wanting to turn on that kitchen oven for lunch or dinner. So, what’s your go to meal? Any ideas or suggestions? Well, if you are looking for something a little different, you are just in luck!

Do you have a mango handy? How about some eggs? A random red pepper that you need to use up? A kitchen staple, curry spice? Mayo and a pinch of salt? What about an onion too?

Great! You have ALL of the ingredients needed to whipping up some summer egg salad! More on that in a bit. Sorry, I know, I always leave cliffhangers in my postings.

How is your weekend so far? Me? I spent my Saturday morning swimming with the G babies!

We swam, jumped, played ball, went down the water slide, splished and splashed until we couldn’t physically go anymore! The entire day reminded me of my childhood. The many times that my grandma and I would tote off to the state park nearby and swim until my lips were blue and skin was ever so wrinkly. What fun!

Towards the mid afternoon of our pool time, it was very obvious that the sleep monster was slowly creeping up. We took a break from the pool, rested, and had some snacks. We had quite the little picnic going for the four of us. Pretzels, cheese, yogurt, grapes, bananas, Cheerios, and hard-boiled eggs. Perfect! Well… not for  ms. A…she is not a fan of hard-boiled eggs. She say’s as her brother peels his egg, “They are stinky.” Eventually even getting up from her spot and moving onto my towel to get away from any egg aroma.

Unfortunately, I am like the little Mr. and enjoy my hard-boiled eggs too. So, once I got home, I  got cracking on my egg salad. YUM-O! I really think that even the pickiest hard-boiled egg naysayer would enjoy some summer egg salad on a warm slice of Ezekiel toast.

Summer Egg Salad (Perfect for two) Adapted from Simple Recipes

Ingredients:

4 Hard boiled eggs, peel and discard the yolks

Chopped onion, to your taste, I used about 2 Tablespoons

1 Chopped small baby red pepper

Pinch of sea salt

Few shakes of curry powder, to taste

1 Heaping spoonful of mayo made with olive oil, any mayo should work

1/2 Chopped fresh mango

1 Warm slice of Ezekiel toast

Directions:

Once the eggs are done boiling and you have peeled the shell, carefully separate the egg white from the yolk. You will only be using the egg white for this recipe. Next toss egg whites, and remaining ingredients into a bowl and smash and mix with a fork until desired consistency.

Serve on a nice slice of warm toast. Enjoy!

Let Them Eat Cake and Celebrate!

Ooohhh you guys, just wait until you hear about the cake we ate! (More on that shortly, promise)

I joked a few weeks back and said, I believe Korea has went straight from the bitter cold, frosty, parka wearing temps, straight into the hot, muggy, hazy, summer month. Well, that’s no joke around these parts. We have fans running, weekly tall frappuccino orders placed to go, and tan lines to prove it. No complaints here, none. Well, maybe just one.. sweet corn from good old Pennsylvania! Hey! I’m a summer girl through and through. I love being able to get out and about.

Speaking of getting out and about…the past weekend was my work picnic. Nothing like the sound of a baseball game in the background, and some brats, burgers, and dogs on the grill to scream summer. We had such a good time! So much food! Who would have thought kimchi would be a normal side dish at a picnic? Welcome to Korea. Nevertheless, it was quite delicious and spicy, just the way we Bees like it.

Back to this cake that I initially spoke of. I baked from scratch one of the most delightful cakes we’ve ever had. Ready for this? Eek! Tiramisu cake! Yes! Very special days call for very special treats. Happy 6 years of marriage to us! Thank you all so much for the cards, and sweet messages wishing us all the best. We truly appreciate your love and support. We say our cheers to another 100+ more just like the first 6!

I know you want me to share the recipe of this cake I’ve been raving on about. Share I will! I found this recipe on Nectar and only altered it slightly by going with a different wine. Otherwise, word for word, I got my bake on exactly the same. Mmmm trust me, the hard work is completely worth it in the end. The folks over at Nectar surly know their way around a kitchen.

The tiramisu birthday cake: (recipe taken straight from Nectar)

The cake:

~ 13 T butter

~ 1 c. sugar

~ 1/3 c. honey

~ 2 eggs

~ 3 yolks

~ 1 t. strong brewed espresso

~ 1 t. vanilla

~ 1/2 c. milk

~ 2 c. flour

~ 2 t. baking powder

prepare two 9-inch baking rounds with butter, flour and parchment paper and set aside. beat the butter and sugar until it is light and fluffy. add the honey and continue to mix. in another bowl whip the eggs, yolks, espresso, vanilla and milk – set this aside. in another bowl, sift the flour and baking powder together. add a bit of the egg mixture to the butter and then a bit of the flour – continue this until the batter is thoroughly mixed and ribbons when you pour it. divide is equally between the two baking pans and bake in the center of the oven for 25 minutes. let stand for 5-10 minutes before turning the layers out onto a cooling rack.

filling number 1:

~ 1/4 c. marsala {sweet italian wine}

~ 1/4 c. strong brewed espresso

whisk together and set aside.

filling number 2:

part one:

~ 7 egg yolks

~ 1/4 c. sugar

~ 8 oz. mascarpone

~ 4 oz. cream cheese

~ 1 T. strong brewed espresso

whip the yolks and sugar together until they become thick and pale. add the mascarpone, cream cheese and espresso. whip until fully incorporated. pour into another bowl and chill.

part two:

~ 1 pt. heavy cream

~ 1/2 c. sugar

~ 2 T. strong brewed espresso

~ 2 T. marsala

combine all ingredients and whip until stiff peaks have formed. remove part one of filling number two from the refrigerator and gently fold – adding small amounts at a time – the mixture into the heavy cream mixture. be gentle as you do not want to lose the air that you whipped into the cream.

filling number 3:

~ 6 oz. roughly chopped semi-sweet chocolate

~ 1 t. espresso grounds

assembly:

when the cakes are cool enough to handle, use a serrated knife to cut off the top round part of the layers – exposing the interior of the cake. place the first layer on a cake platter or serving dish. using a pastry brush – gently brush/dot the espresso and marsala mixture over the top of the cake. top with 1/3 of the cream/mascarpone mixture and spread gently – let it pour over the edges of the cake. sprinkle 1/2 of the chopped chocolate over the mixture – then add another 1/3 of the mixture on top the chocolate. top this with the other cake layer. using the remaining espresso/marsala mixture – brush this layer as well. top with remaining cream/mascarpone and sprinkle the chocolate over the top. using a fine sieve – dust the top with the espresso. let set up in the fridge for at least an hour before cutting into the cake.

Moboal, Philippines

Over Memorial Day we spent a wet and wild weekend on the shores of a wonderful little island of Cebu, in Moalboal, located in the Philippines. The location isn’t very touristy, it was just our style. Most resorts in the area cater to Scuba divers, so entertainment is very laid back and there are next to no night clubs. You can relish in the fact that a cold beer is less than 45 Pesos in most bars, or about 50 cents in US Dollars.

While Mr. B dove with our friend Chris, I spent most of my time snorkeling, and relaxing on a rather magical porch, sunning, reading and of course…sipping on something fruity and refreshing. Just look at the view! The sea lapping right up to our little porch, pleaseeee take me back!

On the last day of our trip we all went sight-seeing around the island, swam with whale sharks, and experienced a “natural” massage at the Kawasan Falls, and ate halo-halo the Filipino dessert made from UBE (purple yam) . Experiences I will never ever forget!

We are aching to get back to the coast again. I do believe that I am suffering from lack of the sea, sun and sand as we speak. That porch off the ocean solidified that we need to invest in a beach home someday. Ahhhh, Somedayyy. When I am in the office I feel the soft quiet pull of the salty wind and sand. So, so unbelievably ready for the summer in South Korea, how about you?

Nightlight

When I was a little girl growing up, I always remember my parents home and grandparents home with a nightlight. What I cannot remember is where the fear of darkness ever came into play in my life to require such a thing. Granted I am the oldest and possibly the light was also there to serve another purpose for younger siblings? The few memories that I do have is making sure that if my bedroom light had to be turned off id get a running start so that I could jump through the air and land in my bed quickly. Was there some sort of black hole under there? A monster hiding that could have grabbed my feet or ankles if I would have casually walked over and just got into bed like a normal person? LOL.. silly thinking back on it all now.

This weekend I packed up my bags and headed to Seoul for a ladies weekend. This was a much delayed and much awaited birthday celebration for my dear friend Mary. While we were at lunch we were discussing her two little ones and their fright associated with the dark night sky. It ended up that they were outside at night due to an appointment. This sense of the unknown scared them, made them want to hurry, run, get to the car. How sweet these two are!

What about you? Did you grow up with a nightlight? Do you remember if you feared the night or dark?
Thankfully like most childhood things, the fear of silly things fizzles out as you grow up. Can I get an Amen? Or else Mary and I wouldn’t ever of had the chance to get out in Seoul at night to see the annual lantern festival. This was my second time getting to see the parade in Seoul since living here. It never gets old! So many beautifully lit lanterns. Some being carried, some being pushed, some being pulled, some even motorized. The cityscape of high-rises in the backdrop gave little light to the parade, but the millions of lanterns that came down the street in masses were what really lit the area up.

Rewind to earlier in the afternoon, sorry you know I am a cake first kind of gal.

We strolled around the Bukchon Hanok Village (북촌한옥마을). This was a first for both Mary and I. I wasn’t sure what to expect, only going off of travel books and lists that I had made and am determined to eventually concur while we live abroad.

Bukchon Hanok Village is home to hundreds of traditional houses called ‘hanok’ that date back many, many, years. These are private homes still lived in by Korean residents. They are absolutely charming! The entire area had tugged at my heartstrings. Such quaint little shops, hidden coffeehouses, tea houses, bakeries, vintage shops, etc. The best part of all, get ready for this, you can do a hanok stay! Yes! They had all kinds of different posts on the web if you are interested in such a thing. Hmm… perhaps an anniversary trip that is approaching? Don’t just take my word for it, get out and see them for yourselves! Okay, you can check out the photos below too.

Relay For Life – South Korea

Dear friends, Many apologize for being MIA this past week, of course I have good reason for my absence. Relay for Life! My team and I walked over 24 hours these past two days, helping to contribute to raising roughly over $35,000 dollars! Finding a cure to kick cancers bum, meeting caregivers, survivors, and new friends, give me an annual sign up, please!

This was the first year that Seoul, Korea has participated in Relay for Life. All and all I think it was a smashing success! So many participants from all walks of life. Each with a story of survival, or the care they gave or are giving, or passion to fight for the cure for others. Such selfless people with huge hearts. It might have been all the chemical in the air from the AstroTurf getting ripped up, but there was such an incredible contagious high felt by all.

Watching the survivors take their first lap really set the tone to kick off the event. Men and woman of all ages. Cancer knows no age, color, race, or boundaries.  Grabbing breakfast that morning a woman approached my girlfriend Mary and I, stated she saw our shirts and had to say thank you. She stated she was a two-time survivor of cancer, always tried to participate in the Relay events each year, but was not able to this year. She shared openly shared a personal piece of her survival story with us. I cannot explain the flood of emotions that consumed my body at that point.

I have to reign in the misty eyed vibe I’ve got going in this post, end by lighten things up with some of the fun lap theme’s that our team participated in. These include the bubble lap, the beach party, children’s character, and red white and blue pride.

A-Hiking We Will Go!

One of the many, many, things that I adore about Korea is the endless mountain trails that you can hike. If you have followed our blog up until this point, you know that we have hiked some beautiful places in various parts of Korea.

I feel like hiking is taken to another level in Korea. To be considered a serious hiker, you need to dress the part. I am talking dressing to the nines. Matching hiking boots, hiking pants, hiking jacket, hat, sunglasses, gloves, backpack, and walking poles or stick. PS. your backpack better come packed with the essential makgeolli or soju too. These people know how to have a good ol’ time while they get their hike on. As you can see…I am not a serious hiker. I mean come on, what tee-shirt am I wearing? “Lettuce, Turnip, the beets” ha-ha-ha!

Back to the topic of actually hiking, some of my co-workers and I woke up bright and early and hit the trails near our home this morning. I struggled getting out of bed so early knowing it was a Saturday. The snooze button may or may not have been hit a handful of times. Once I got up, grabbed a cup of joe and a banana, I was good to go!

The sun was shining! Birds were chirping! The air was so fresh! Bits of greens and flowers were starting to peak from the earth! The endorphins were pumping! Plus we beat the Korean billy-goat crowds! It was an absolutely wonderful morning and great time getting to know one another more outside of the office.

Sight & Sound Theatre

Christmases past we Bee’s have given our grandparents tickets to attend the Sight and Sound Theatre, typically accompanying them. Since we have been away almost two years, sadly we haven’t been able to uphold that tradition and go with them. So this year because we knew we’d be home, we purchased tickets to go!

Sight and Sound brings the bible to musical theater. This trip marked my third performance. Each time we attend I walk away even more touched by the story, music, performance, and stage production. It’s truly quite a sight to see!

This performance we all set sail on the extraordinary journey with Jonah and the whale! When we got to see the whale float over the crowd, and the glowing lifelike jellyfish drop from above our heads, our mouths all dropped in amazement.

I’m looking forward to the future when we get to see another show.

A horse and buggy is a pretty familiar and common sight for those of us that grew up in Central Pennsylvania, especially Lancaster. But, there are many visitors that vacation or travel through the state that come for a glimpse or experience in the Amish lifestyle and practices. I thought it was only fitting to include some photos of a tourist attraction that we passed along the route from seeing our show that day.

Doesn’t the countryside look so peaceful? Bloggers, this is my Pennsylvania.

After a wee little snafo with forgetting a tripod piece…oops…who would have thought that piece belonged to that thing…

We crazily shivered captured ourselves in the beautiful snow covered belly of the Soyo mountain. Yes, in 20 degree weather.

Tree Lighting

It’s hard to get over that it is December already, the very last month of the 2012 year. Goodness, what a full year it has been.

Tonight the sounds and smells of Christmas were in the air, it was absolutely wonderful! Perhaps even the best time of the year? Our small community held a tree lighting and wouldn’t you know it the big man in red even stopped in for a visit.

This past week we even had our first  snowfall of the season in our little town of Dongducheon. The backdrop from our living room windows are snow-covered fields, hills and trees. It’s so magical! I truly don’t believe it gets any better than this.

 

Christmas Market

Good evening! Ah, today has been such a beautiful and awesome day! To jump start the festive season I ventured into the city to check out a Christmas Market with my dear friend Mary.

The Christmas market was a bit smaller than what we were expecting, however it was something different and Christmasy so we were both pretty excited. It was really easy to find, located at the Seongbukcheon Fountain Square (성북천 분수광장) just off Hansung University Station (exit 2). Seongbuk Global Village Center hosted the event, the tents were all ran by the European embassies each selling goodies and treats from their home countries.

There was Gluehwein, sausage, chocolate chaud, Roesti, Raclette cheese, lasagna, Italian coffee, crepes, a heavenly divine slice of cheesecake, and holiday cookies too. Children could write a letter to Santa for Christmas, there were a few Christmas decorations, and a live band. We arrive right before noon and had the chance to walk around to each tent before the larger crowd moved in.

After leaving the marketplace we wanted to grab some lunch together before heading home. We strolled up the street to check out the area and see where our tummy and noses lead us. As we strolled we found multiple fruit stands all with delicious displays of persimmons, clementine oranges, apples, and pomegranate. We couldn’t help ourselves we had to grab a little bag of persimmons and clementines.  Both Mary, I, and our families really enjoy the fruits of the Fall and Winter months here in Korea.

In the end our tummies and noses lead us straight to a budae jjigae restaurant. We were outside discussing the sign and picture of the stew when the Korean women inside came out to explain in her best English what the restaurant was. I have had budae jigae many times before but Mary had not. The woman was very convincing, the restaurant looked really clean, “sure why not” Mary said. What a free spirit this woman has, I just love it! In the end she said she loved the stew. I was so happy that she got a chance to try another new Korean dish that she enjoyed.
