What’s cooking?

Welcome back to our kitchen! Pull up a chair at our kitchen island and get comfy. Outside of our mini Mardi Gras feast and unbeetable Valentine cake, we’re sharing the recap of what we whipped up in our kitchen over the past week. We’ve got some exciting nostalgic dishes we’ve made a bit more modern to share with you!

Drumroll please..we tested out four more family recipes from Mr. B’s grandparents handwritten cookbook that dates back to 1949! It’s so special thinking about and picturing Howard and Rose cooking these very recipes together back then in their kitchen, perhaps doing the same exact things were doing in the present day.

This super crunchy coconut granola! It’s been perking up our morning Greek yogurt and fruit routine. Try it! Next time I’m thinking I’ll use coconut extract instead of vanilla.

Chicken Marsala with homemade garlic bread and garden salads.

Seared tuna, a fairly regular staple at our table, was served as the main dish alongside of diced oven roasted rutabaga.

The first family recipe tested was parsley curried corn. Originally we prepared as directed straight from the recipe, but in the end slightly altered it to more of our taste. SPICE! Yeah, we had to kick it up a notch and make it a bit more modern with the addition of hot madras curry powder. This dish was absolutely delicious and is a new favorite for sure.

The second B family recipe tested was, pork tenderloin in cream sauce. Again, after preparing as originally directed, we modernized and altered by seasoning to our taste, it just didn’t have the pizazz we were after. We ended up adding green peppercorns and chopped onions.

We paired the pork tenderloin with garden sweet peas, sautéed mushrooms in a pepper sauce and puréed sweet potatoes seasoned with maple, butter, pepper. D-licious!

Oven roasted eggplant halves stuffed with zucchini, yellow squash, spicy Italian sausage, onion, and gorgonzola cheese. Like spaghetti, these were even better served as leftover for lunch, the flavors just popped even more!

The stuffed eggplants were served with a side of roasted garlic butter mushrooms sprinkled liberally with salt and cracked black pepper. These little guys were like a vegetarian alternative to Escargot! The mushrooms gave the texture and the butter, garlic, salt and cracked black pepper brought the taste. Plus who doesn’t like the fact that the caps hold in all that buttery goodness? It’s all about those vehicles for butter 😉

The third family recipe tested was “Boston Baked Beans” and “BBQed Chicken”.

The Boston baked beans used dried beans and minimal ingredients which consisted of molasses, sugar, salt and a bit of pepper and home cured bacon. The Flavor was fantastic!

The BBQed chicken was a chicken quartered and the sauce was from scratch. The sauce simmered away for quite a bit of time on the stove, then it covered the chicken and was baked. This recipe was delicious with a delightful blend we were not accustomed to. Oh! the chicken came out super moist too!

Then there was a quick last-minute dessert created. Inspired by our recent trip to Manimal in Itaewon, Mr. B halved bananas and drizzled them with homemade caramel and then topped it all off with fresh vanilla whipped cream. Boom! Front runner to the Bananimal!

Weekending and Côte Jardin

Over the weekend we had some appointments are errands to run in Seoul, so we made an entire day of it and met up with some of our very good friends.

We took them to a small cozy French café and bistro, Côte Jardin, located off and away from the main street in Itaewon.

This was the second time we have dined at the bistro and what brought us back was the romantic yet casual vibe, the very attentive staff (each visit the management has struck up a conversation with us and you can just feel their passion for their customers and business) and of course the delicious French cuisine!

On this trip, Ms. B ordered the burger for the second time, not a typical move on her part. The rest of the table was so convinced with her past experience, wouldn’t you know that they too followed suit. (Eek! Pressure was on!)

Yes, we DO realize that not many people would associate the French cuisine with a “burger”, but to us, this bistro certainly trophied the burger points on the scorecard for the French! They made their country proud!

So the burger… It was a bit different from the first time we had visited, however the basis of the burger, a mixture of lamb and beef combination, still shone through with its distinctive taste.

This time the burger was a bit more traditional with a nice cut of bacon, fresh lettuce, tomato, onion, topped with ground mustard sauce, and cheese. Délicieux!

This was the second time that we ordered the French onion soup as well. Mmmmmm… One can never go wrong on a very cold day with slowly cooked, caramelised onions that are both mellow and sweet in the perfect broth, topped off with a crusty bread and thick melted cheese.

Côte Jardin is the quintessential combination of offering a fantastic menu, paired with excellent wines, a caring staff, affordable prices and a personal, inviting, charming environment.

UN DEUX TROIS Brasserie (Itaewon)

Cherry blossoms, or fleurs de cerisiers as they would say in French, have been making their perfect pink appearance the past few days in South Korea. Since living here it has been one of the many beautiful things I eagerly look forward to each spring.

Speaking of all things French…I recently took one of those silly Facebook quizzes (you know the ones that secretly gather all of your personal information) and it indicated Paris was the perfect city for us! HA-HA… ttttthhhhanks Facebook, I could have told you that years and years ago. Ever since I was a little girl I have been enchanted by French culture and cuisine.

If you recall from my prior post, we ended our meatless month of March and wanted to celebrate with a feast, something extra special… French cuisine! I spent the entire month of March lusting after the thought of this dinner and it was finally here! So Saturday evening we joined our good friends at UN DEUX TROIS Brasserie for dinner. It was absolutely delightful! We said cheers to some recent job related news for the two of them, but little did we know that we’d be saying an even bigger cheers by the end of the meal. (More on that later)

The reservations were made for 6PM and due to the heavy Seoul weekend/ holiday traffic, we all were running a tad bit late. Luckily the staff were kind and very understanding and there was no issue made. On that note, we do highly recommend making a reservation because as the sun began to set the crowd grew. When we did eventually arrive, we were instantly greeted by the friendly staff and immediately taken to our table. As we walked through the restaurant, I felt like I was in a daydream being whisked through a genuine French brasserie with the decor of small hexagonal white floor tiles and the glow of the tiny white candles arranged on the sleek black furniture. EEK! I swoon for this black and white Parisian style!

We ordered the following and enjoyed tasting one another’s meals as if we were food critiques. I think we made the chef somewhat nervous as he peered out from the open kitchen, watching us savoring each bite, discussing the flavors, insisting that one another try another bite from this section, now this section of the plate. Our many compliments to the chef and kitchen staff as well.

Final verdict on the food is…Everything we ate for the most part was fresh, tasty, rich, sophisticated and complex. When are we going back again?! My vote is sometime in late spring, early summer (got that Mr. B?). I keep picturing us dining on the terrace in the evening, with our glass of wine in hand as we watch the world go by. My expectation for this place far exceeded what I even imagined. Overall a wonderful experience and well worth a dining splurged!

I left you guys sort of on a cliffhanger above, I apologize. I think this will make up for it…

Seriously….Just by looking at these two, it’s easy to see they’re nuts over each other, since he can’t seem to a keep that gigantic smile off his face when his eyes are on her. Her eyes always have this twinkle when he pulls her in close; honestly, it’s that romantic movie look you that you rarely see in person. The two of them are perfect together and we are so pleased that they found one another. CHEERS (see I told you more to cheers)! I’m not going to spoil the thunder of the engagement details, you will need to ask the happy couple to be. Congratulations guys!

Wednesday Weekday Update

Well hello again and welcome back! I hate to ask, but how’s the weather been where you live? Here? Oh, here it’s been rather mild, we’ve been pretty lucky. Some of the local expats married to Koreans tell me that the last snow we had recently is like the same representation of punxsutawney Phil (the groundhog) in the states. I’m not sure if it’s really true, or even makes sense…but…who am I to question it? Eh, I’ll go with it.

Enough weather chatter let’s get down to the important stuff. You know like what have you been eating these days? Salads? Soups? Meat stuffed with more meat? Inquiring minds want to know!

I’d love to say that lately we’ve been eating less sugar and sweets, walking more, traveling more, but then I’d be lying, LOL. You know we love a good dessert, the yellow dust has been creeping in lately from China and messing with our walks, travel, nope there hasn’t been any traveling to update you on. Wamp-wamp.

We have however been reading lots of books recently, which isn’t the most typical for both of us, but Kitchen Confidential: Adventures in the Culinary Underbelly been a favorite! Also, I’ve recently discovered podcast on ITunes. Seriously?! How did I miss the boat on this one? Stuff you Missed in History Class, Freakonomics, The Sporkful. If you didn’t know, you’re welcome too.

We have however decided to go meatless for the entire month of March. Yep, you read it here first folks…Bees have went vegetarian! Be prepared if you cross our paths and we go caveman on you. How’s the saying go? I’m sorry for what I said when I was hungry? Ha-Ha! Something like that, right? Just kidding, it’s not that extreme for us. We honestly don’t consume a ton of meat To begin with.

We’ve got two exceptions to our month of meatless March. One is that we sorta kinda scheduled a supper club already and can’t force all of our guest to only consume vegetarian…wait…or could we? Kidding! Don’t worry Mandy, there will be bacon! The other is that we will still consume fish. I think that technically makes us Pescetarian, but who’s labeling here?

We kicked off our very last day in February with our final meat filled meal in Itaewon at Linus BBQ. This place has a MASH tent and vibe going on, what’s not to love about that? I forgot my camera, but Mr. B had me covered with iPhone photos of the meal. Someone recently said that if you don’t take a photo of your meals, it didn’t really happen. So here we go…because….this.really.happened. (And we already crave more) make sure to show up early to get a table and due to popular demand they might run out of whatever you and your belly craves.

After we finished our meal, I made sure to shoot Linus a message. “Just wanted to send a quick thank you. We had an outstanding dinner tonight at your restaurant. Your staff was super quick and very attentive. The food….wow…I’m not even sure how to even begin to describe the deliciousness. We were instantly swept on a daydream back to our hometown in Pennsylvania with the sides of baked mac and cheese, coleslaw and baked beans. The meat brought back so many memories of our travels in the deep South. epic. It had the perfect balance of juiciness, smoke flavor and season. Well done! We will absolutely tell our friends and continue to come back for more when we get down to Seoul. Thanks again Linus.”

There wasn’t any korean fusion in the food, just flat-out good Southern BBQ. It’s sure to cure any homesickness you may be feeling, or in our case celebrate and kickoff a months worth of being meat free. Ps: wait until you see what we’ve decided on when we end our month!

Next, let’s talk live culture, probiotic to be exact. I’ve got a mini science lab brewing between my fridge and countertops. I’ve been lucky enough to come across milk kefir grains gifted from a sweet friend that is just as passionate about cooking, eating, nutrition and just plain food! Have you ever heard of Kefir, or maybe you make them as well? Tips are always welcomed. These guys are a powerhouse of goodness and I’ve been throwing it into our morning breakfast smoothies. YUM!

More see you laters

Today I joined our friends for brunch at The Bakers Table in Seoul. As I sat there enjoying the Farmer plate, (sunny side up of course), it hit me like a ton of bricks that this was yet another couple of wonderful friends that we’d say our see you laters to (never goodbyes). Yes, in the early morning (SUPER EARLY!) this couple would be off to starting a new chapter, soon with a beautiful bundle of joy, in Malaysia together. We were grateful to have the opportunity to spend some time with them and to open our home up to them on their final nights in Korea.

You think after all of these years abroad it would get easier to see our friends off, but it isn’t. Every time we arrive at this point I always sit and wonder why certain people enter into our lives when they do. We all start off strangers, but end up meaning the world to one another, with this link and strong bond. We know we will see you guys again very soon and cannot wait to welcome this beautiful baby into the world with you as well! Cheers!

Seoul: Jacoby’s Burger

(A bit delayed on posting this one Ooops…)

This weekend, THIS WEEKEND!! OoOoOhhh, it was soooo good! So so very good. It started off with a meet up with our good friends, making the aquaintance of a new friend visiting from Hong-Kong, taking in those beautifully fall colored leaves, and food…food…and more food (come to think about it, I think I strolled rolled around Seoul).

The weather was PERFECT! Just the right amount of fall crispiness to help cross off this white girls fall to do list. ha-ha! (Come onnn how true is this list??)

Anyways, our good friends recently raved about a burger joint in Seoul that we needed to check out. The reviews were a bit dodgy online, however they were mostly about the staff ignoring them, attitude etc. So what the heck, why not give it a try? We ended up in the area with a hefty appetite after taking in all those beautiful fall leaves.

The restaurant is Jacoby’s Burgers located just north of Noksapyung Station in Seoul. Don’t be fooled by the typical restaurant look from the outside, Jacoby’s has quite a unique menu that serves juicy burgers a la carte, pasta, vegetarian burgers, onion rings, freshly cut french fries, salsa and beer. YUM-YUM-YUMMM! Plus they so kindly held the side of attitude when we went, so the overall experience was pretty freggin fantastically delicious.

Usually I’m the kind of gal that would order a big ‘ol burger, but my friend Mandy told me that Jacoby’s makes a pretty mean veggie burger made with red-beans. It sparked my interest and I decided to give it a whirl. Now I was left with the harder decisions, to add bacon or not? decisions, decisions…. I know all the vegetarians are cringing out there. Sorry.

WOW! The red-bean burger was surprisingly flavorful with a nice little spicy kick. I’d absolutely order it again, but my eye is also on the gut buster burger. Speaking of the gut buster, our table was right up front where we could watch all the burger creations come out of the kitchen. Watching people’s eyes and mouth’s drop open as the gut buster burger landed on their table was priceless! Lordy! Look at that thing!

Across the street from Jacoby’s we giggled as we checked out the Camping Company Restaurant. This is urban camping at its finest! We’ve got to go back just go giggle as we grill…totally worth it!

Eventually we made our way to Insadong that afternoon and we found out that it just so happened to be Makgeolli (Korean rice wine) day. We cheers the occasion and ordered a roadie, the adios mother. Whew! Quickly found out why it was named that…talk about a nice adult beverage concoction.

Seoul’s Sip & Paint

Eek! Can you believe I almost forgot to post about Kelsey and I’s Sip and paint class in Seoul last weekend? Or, as my Uncle described it, gulp and drip. Ha ha ha! You may also know the class as paint and pour, or corks and canvas.

Before I get into that, we started off our morning with an early lunch at the Bakers Table in Itaewon. We grabbed panini’s and soup. It was perfect….well except for my genius idea to have soup. Folks, it was at least 90 degrees out. I have no idea what I was thinking. Perhaps I was excited because I heard pumpkin? Yep, they got me with sweet pumpkin soup.

But really, we had a blast! Kelsey signed us both up as a birthday gift, what a sweetheart she is! We had been talking about the sip and paint class she did in the states with penguins and the fun that she had. I hadn’t taken a class yet, but really wanted to try one out. Luckily, Art & Seoul started to offer a variety of classes to take and Kelsey jumped right on it. That gal! I’m telling you!

The idea is that you get together with a group of friends for a relaxing class of sipping, painting and creating! You bring your own alcohol, tag the bottle with your name, you can bring snacks, but there were some light refreshments to nibble on too.

We were immediately greeted by the lovely host, directed to find our canvas where our paint brushes, paint and smock were. We had a super upbeat and informative instructor that guided us through our masterpiece step by step at the perfect pace. Our instructor was patient and fun! I think Kelsey and I asked for black pain about a zillion times and thankfully she didn’t seem to mind one bit. After all I guess she knew going into instructing us that we we’d be a group of tipsy armature artist.

Half of the class painted Buddha, the other half painted cherry blossoms. We pre-selected Buddha. The colors and creations that I got to see come out on everyone’s canvas was the best part to me. When I was there painting the memory of my grandparents telling me about my dad and I coloring when I was little popped into my head. They asked how I did with staying in the lines on my picture and at the time my Dad say, “Well there is room for improvement.” Dad, hopefully I got a little better with my color technique.

Last Weekend

You must excuse me for the lack of post from last weekend. The majority of our July has been spent staying outside until the last very last second possible, or until the rain moves in. We are in monsoon season here in S.Korea so getting out and about when the sun is shining is imperative if you are trying to squeeze every ounce of “clear” sky out of the dwindling summer.

We trekked slowly up the base of Soyosan to marvel at the lush green trees. Soyosan is prime people watching too! During the hot season’s Korean’s often lounge and cool themselves in the trickling streams that come off the base of the mountain. You never know what you might see or get invited to join.

Don’t worry we’ve been properly hydrating with lemon water and practically turning into rabbits nibbling on all of our vegetable greens. (Beats turning on the oven in the humidity and heat).

I have a new Korean friendship blossoming and we enjoyed a really nice dinner together at a unique little restaurant near both of our homes. We dined on duck and a soup made of perilla leaves.

Not familiar with perilla leaves? Don’t worry it is most likely because it grows in Korea, China, Nepal and India. It’s a flavor I really cannot explain. The taste is quite pungent and has a nutty peppery taste to it. It is a herb that is often referred to a wild sesame. I was told that this heart-shaped leaf is a Korean staple and you can find it almost year round served in Korean homes. Plus it gets better! Of course it has healing components to it as well. If you are feeling tired, suffer from frequent headaches, need some anti-inflammatory relief, detoxify fish poisoning, combats morning sickness. WHOA! Talk about a marvelous little leaf!

and here is where I let you all down…. can you believe I ate the soup before I took a photo to share with all of you? Oops… trust me.. it would have just been a photo of a bowl of soup.

Kelsey stayed over too! She came sharing her newest sweets with us. What a sweetie!

We hopped on an AM train into Seoul and ran about in the on again off again rain to a vegan bakery called PLANT owned and operated by the sweetest girl, Mipa. Enjoyed a peanut Thai bowl and grilled chickpea sandwich. Both incredibly sumptuous and we shared one anther’s lunch family style. We are family after all! We then went to Maybell Bakery where I introduced Kelsey to a fabulous European bakery with freshly baked focaccia, baguette, croissants. I think it’s safe to say she’s in heaven.

We got home and felt like “grilling” hot dogs. I whipped up a vegan macaroni salad and she grilled the dogs. We were quite the little team in the kitchen if I do say so myself.

Howbeit it wasn’t as exciting of an update, it’s summer folks! Get off the Internet and GET OUTSIDE!

Weekends

Weekends….If my bathing suit asks, tell it there’s only been carrot sticks and fruit smoothies for this gal. HA HA.

Mr. B’s Uncle, Kelsey’s father, and Kelsey’s close friend Meghan were in town this weekend. Kelsey’s been playing tour guide around Seoul and asked if we all could meet up at Kervan for a late lunch, followed up by a stop at Passion 5 and Softree for a sweet treat, then onto adult beverages at Reilly’s Taphouse. Of course we gladly accepted the offer.

We all had a blast chatting the evening away. A storm that was brewing most of the afternoon finally made its appearance, but even that didn’t put a damper on our fun!

(Kervan) Serving excellent turkish cuisine. Every dish was favorable and delicious! Check out that balloon bread! The service was fast and brought almost all of the food out together. I swooned over the beautiful lanterns and the tiles on the wall, red and turquoise blue. It wasn’t terribly busy when we arrived so we were seated rather quickly while we waited on the rest of our group.

Mr. B’s Uncle opening the door to Passion 5 with the huge Harry Potter like chandelier hanging in the back. I love that thing! It looks like it is floating in mid-air in the evening.

The service at Passion 5 however not so fantastic this time around. Let me digress, the bakery was rather busy, but we felt that we were looked over continuously because we were foreigners. The biggest turn off was when we finally were assisted with picking out the desserts we wanted, the young woman wouldn’t make eye contact and had a curled lip the entire time she was pulling each mini pie or cake out of the display case. When we asked for everything to be packed up to go as well as forks because there was no seating available, we weren’t given a bag and asking for forks was as if we had asked for her first newborn. Don’t worry this experience didn’t kill our spirit either.

(Softree) This was my choice for dessert. I opted for the classic honey chip this time.

(Rileys Taphouse) This was the first time we went to Rileys, we got there just in time too. We were seated at a nice hightop table perfect for people watching. Side note, can I ask when the high wasted shorts and midriff tops and neon glasses without lenses came back? Meh, what do I know? I am certainly no Fashionista. I just cannot get down with this recent fashion craze. We enjoyed a round of cider and ales and playing around with my new camera. We absolutely plan to go back!

Showers of pink petals

I don’t know where it came from…but the flowers seemed to explode on all the trees this past weekend. Just walking in the wind and shower of delicate pink petals painted this picture to me that everything was right with the world in that very moment.

I met up with Miss Kelsey again this past weekend to get my mop cut. Seriously folks it was getting a bit out of control. I don’t want to go there but I will. Can we say business in the front party in the back?? HA-HA. Kelsey wanted to get a trim and manicure too, so it was a perfect excuse for a girls day.

Before heading off to our salon appointment we strolled all around Itaewon. The weather was a bit brisk but it was perfect for walking. You know the kind right? Not to hot, not to terribly cold. Besides, studies show that because walking is a repetitive activity, it helps trigger the body’s relaxation mode that helps reduce stress (we both needed that after the week we had) plus, at the same time, a ten minute walk provides an immediate energy booster and improves your mood. It’s proven to snap you out of your funk (again needed). Research also suggest that you should aim for a minimum of 10,000 steps a day (equivalent to approximately 5 miles), the magic number that keeps most from gaining weight. Here’s what my Fitbit tracked while strolling around the Itaewon area with Kelsey. Not to shabby right? Okay, I will hop off my soapbox now.

Perhaps all those steps made up for the lunch we had? Softree for a magic lamp. It’s magical all right! Organic vanilla soft-serve with caramel swirls and a fine crushed nut topping.
