Spaghetti Squash

image

Ahhhhh another Thursday night save by the spaghetti squash.

Isn’t the spaghetti squash is just a gem of a vegetable? Well then again, i haven’t met a squash i didn’t instantly love. If I recall, I discovered it not long after Mr. B and I got married and it has been a staple in our diets ever since. I think I make an effort to pick one up about every other month or so.

So easy! I mean I’m talking reallllyyyyy easy. Slice it in half, remove a few seeds, pop it in the microwave about 5-10 minutes. After it’s heated, take a fork and scrape the insides of the squash as it falls out like spaghetti. The rest is totally up to you. Red sauce, carbonara, olive oil and spices….endless possibilities and all within a flash. Tonight I added organic ground chicken, fresh baby spinach leaves, fresh basil leaves and some Paul Newmans organic marinara, topped with shredded mozzarella cheese.

It gets better…..check out the nutrition vs. regular pasta here. Thank me later!

Have you ever tried spaghetti squash? If not, what’s stopping you?

Pureed Tomato Soup with Gouda Cheese

Mmmhmmmm…. someone couldn’t resist the temptation of giving the Vitamix a whirl tonight. Luckily no episodes of cyclone explosions of tomato soup on the ceiling, backsplash or floor. I’ll give it to Mr. B, he had a fun list of ingredients that made for a very delicious pureed tomato soup. He also won me over with the cheesiest toasted cheese sandwich on ezekiel bread too! That’s my guy, he knows the way to my heart. Speaking of hearts he also picked me up conversation hearts <3! Remember these little guys? Did anyone else think these were gone for good? Don't worry, I included the VERY difficult recipe if you'd like to enjoy a nice bowl of our tomato soup with gouda cheese tonight. It's VERY difficult. Don't say that I didn't warn you. What is your favorite soup to accompany a toasted cheese sandwich?

PS: What’s up with Dumb Starbucks in LA? Personally i’d give the seasonal “Wuppy Duppy Latte” a go. Perhaps a franchise opportunity for South Korea? Asia loves their coffee shops and trademark infringement… what’s that?

Pancake Princess

Overnight we finally got a little taste of the snow I’ve been asking for. Of course you might be getting tired of the powdery white stuff wherever you are, even looking at any photos of it might be daunting, but I’m still not satisfied with the amount that we’ve had this winter. Like most things… it came to an end and has been melting as we speak. Enter sad squishy face here. Perhaps in the next few weeks we will get some record-breaking, state of emergency stuff!

I woke up snapped some photos, yep neighbors I was the crazy lady leaning out the window at 8AM giddy about the snow.

Anyways, I recently thew out some rancid coconut flour that I think I accidentally should have been keeping in the freezer or refrigerator. Oops. Luckily it was only a small amount, so I didn’t feel as guilty. I know this is record-breaking stuff folks. Just kidding, I have a reason to my madness. I was going to make pancakes. Epic fail. Then I found out that a dear friend was able to locate and pick some up for me and saved this princesses Sunday morning pancakes making! Thanks again Sarah!

I think you are really going to enjoy these! Plus check out all the different people’s dietary restrictions this recipe can cater to. Let’s get mixing! Don’t forget some awesome tunes too!

Plunge

Besides the temperatures taking a plunge…

We took the plunge….and finally purchased a Vitamix!

EEK! A VITAMIX!

I’ve been lusting after this bad boy for almost a year and a half. Even after reviewing all the videos and blogger ratings over the past year, I was still blown away by how powerful and smooth anything you put into the Vitamix in person comes out. I’m talking reallyyyyy smooth! Superrrr smooth!

I’ve been craving hummus, perfect excuse to use the Vitamix, right? Right! The blender box included an entire book of various recipes you can use the Vitamix for. hummus was among them and I already had all of the ingredients. So blend away I did.

The Vitamix was so quick to use and just as quick to clean up afterwards. Seriously topping my favorite kitchen gadgets! I cannot wait to find more excuses to blend in this powerful guy. I’m open to suggestions and recipes please.

What’s your favorite kitchen gadget?
Do you blend frequently? If so share some recipes pretty please.

Cheer Up Butternut

As you see, there hasn’t been much backpacking for this bee lately, that pesky groundhog seemed to be right again! The last few days we’ve had very tundra like conditions. Complete with icy roads and all. Spring is all the buzz lately at work. When’s it going to perk up? Brighten up? Be green again? It’s positively hard to stay positive during these cold gloomy winter days. They seem so long, so cold, and just so ….well….gray. The bright side is, we’re in that home stretch, right?

Tonight I baked a butternut squash and covered it with coconut oil and cinnamon. Whoa! It tasted very similar to French toast, but obviously much healthier. Try it out! Thank me later. Next time I might add some red pepper flakes or something to spice it up. What do you think?

Also with all the gloominess and the fact my mood had taken a serious nosedive today, I needed something on the quick no fuss side for dinner. A fun salad!

I can’t believe I’m going to admit this in public, but see the flaky stuff? Looks like tuna, right? Wrong. I ventured out and used salmon from a can. Guess what.. I loved it! Why didn’t anyone tell me it was this good? It’s not anywhere close to the ick factor I once thought would appear in that can. Good source of omega 3 too! However the two pieces of peanut butter fudge I devoured that my grandparents sent us most likely cancelled out that healthy meal. Oops.

Do you add anything crazy to your salads? I’m open to suggestions!

Monday Types

Are you a Monday type of person? Let me elaborate…you know the annoying type that has to start off your work week by asking all of your co-workers, “What did you get into this weekend?” I’ll admit, I was a Monday type of gal until recently when I started to realize how much pressure it seems to put on some people to come up with an awesomely awesome answer on the spot.

It’s like you can almost see the gears turning as they search for something to keep the other party interested. Like they want to blurt out, “We went rock climbing, kayaking, enjoyed a helicopter ride over Seoul tower, and then we enjoyed dinner at a super exclusive restaurant prepared personally by chef Edward Kwon.” Ha-Ha! Then they look at you like and what did you do this weekend?

For me…I just cannot play into this game. We do exciting things here and there. Otherwise, I’m perfectly content and actually look forward to my mundane weekends that consist of not traveling outside a five-mile radius to our home, relaxing with a hot cuppa tea and book, watching past sex and the city episodes with the hubs (don’t tell him I told ya)coffee dates, cooking together in our kitchen, even tackling the laundry monster.

Yep, for all you Monday types…there ya have it.

Thoughts Of…

How often do you dust? It’s not that I dislike it…
I’d rather just spend my time vacuuming
I very much love to vacuum. Shared a teensy bit more about myself with you
OCD. Fact of life.
Is it just me, or do some people make elevator rides awkward? I hardly ever see the people living in our building, however occasionally there’s the AM awkward ride down to the parking garage. It’s all darty eye contact and stuff…
I met up with a dear friend at a local pastry shop and not once was I tempted to touch my phone. Maybe its Asia, or just today’s society, but do you find it a rarity to dine out or meet up with others and not see them touch, check, text, or Facebook while in your company? Reminds me of this YouTube.
Oh, yeah! Happy MLK Day!
A mug of Vanilla Latte and a small tarty fro-yo while the snow falls outside

Making Friends as an Adult.

I found myself deep in thought, while sipping my coffee, waiting on a dear friend at our local weekend coffee spot. The thoughts deep like the swirls of whipped topping and caramel mixing with my coffee were about making friends as an adult. Let’s go one more step more and add to the complications of that… making friends. as an adult. while living abroad. I feel that in high school or even college for that matter while they are preparing you for the “real world”, they should be instructing on real world issues such as when you take that gigantic leap outside of your safety blanket (your hometown or surrounding area) what you may find yourself feeling.

I know, I know… the world’s tinniest violin is playing for me right this second. I’ll take this second to have a small (but respectful) pity party for myself, then we’ll get to moving on with this post.

2013 proved to be one of the more challenging years for me in my adult life. However during those challenges, I met an acquaintance of a friend that turned into a dear friend, a sister for life. Unfortunately, I know all to well that she is only abroad temporarily and will be moving on in the next few months. I’ll always remember a wise family member saying that quality over quantity will matter when you are an adult. At the time I remember thinking, yeah sure… then gloating about all of the “friends” that I had on my Myspace page (Don’t try to deny it..you know you had a Myspace page too). Now my 20 something self is understanding just how true that family member’s statement was. As a child, my grandparents told me that I could be-friend anyone, anywhere. The public pool, yep had a random swim buddy, the playground, yep had a tag or jungle gym pal, high-school, yep some bad gal pals and good gal pals, college, yep crazy but fun housemates. Truly I have been blessed to have met some amazing friends along the way and share equally amazing memories with each of them too.

However, over the past few years, let’s say the past three, I haven’t had the best of luck making friends since we moved abroad. I blame it on my mostly on my work schedule, and maybe partially on the fact that I have turned a bit anti-social. And introvert-ish. I’ll digress. Some of the first “friends” I made when we moved abroad turned out to be a group of ladies that belonged to a church group. Sound choice, right? Wrong…some of these women made me feel so insecure with myself. Constantly judging my knowledge of religion, my life, masking me with this toxic vibe, etc. Isn’t that comical? Ladies of the church! But at the time I couldn’t see it… Then I snapped out of it and distanced myself. I made the decision that I really longed for quality over quantity. I think that is where the fuel was added to the fire.

Don’t misunderstand my words, Mr. B and I have some great couple friends, most of them with kids too. (Apparently we are freaks for not having one by now). Ooops. Kidding! They are outstanding and we love their kids too!

So how does one make quality friends? Sometimes I wonder if I am sending out the wrong vibe? Hmm.. Really, what is the right vibe to attract quality?

Although…side note…I did take a gigantic leap and branch out last month. Yes, I made random conversation with a woman while she bundled up her baby, about politics outside of the grocery store. We ended up exchanging Facebook names and are “friends”(our generations most acceptable way to socialize, right?) Since that first encounter, almost every time I run into the grocery store to grab something we bump into one another. We talk eggplant, holidays, serious grocery chatter. This most recent encounter we actually took a step forward and decided to make a plan to meet up for coffee soon. Hopefully I do not let her down by not being able to uphold my end of conversation about breastfeeding, the homeschool, private, or public school decision. You know, whatever all of you cool moms talk about over coffee. We will see.

So…. there it is just in time for my coffee dates arrival too. I’d love to hear your thoughts.
