Pancake Princess

Overnight we finally got a little taste of the snow I’ve been asking for. Of course you might be getting tired of the powdery white stuff wherever you are, even looking at any photos of it might be daunting, but I’m still not satisfied with the amount that we’ve had this winter. Like most things… it came to an end and has been melting as we speak. Enter sad squishy face here. Perhaps in the next few weeks we will get some record-breaking, state of emergency stuff!

I woke up snapped some photos, yep neighbors I was the crazy lady leaning out the window at 8AM giddy about the snow.

Anyways, I recently thew out some rancid coconut flour that I think I accidentally should have been keeping in the freezer or refrigerator. Oops. Luckily it was only a small amount, so I didn’t feel as guilty. I know this is record-breaking stuff folks. Just kidding, I have a reason to my madness. I was going to make pancakes. Epic fail. Then I found out that a dear friend was able to locate and pick some up for me and saved this princesses Sunday morning pancakes making! Thanks again Sarah!

Coconut Flour Pancakes (Gluten Free/Grain Free/Low Carb/Low Calorie/High Protein)
Slightly altered from Foodie Fiasco

Ingredients

2 Egg whites
1/4 Cup coconut flour
1/2 Cup almond milk
1 Teaspoon vanilla Extract
1/2 Teaspoon baking powder
1/8 Teaspoon salt
1/8 Teaspoon cinnamon
1 1/2 Teaspoon honey or any kind of sweetener such as stevia or agave that you prefer

Instructions

Combine all ingredients and stir until thoroughly combined. Heat a greased nonstick skillet over medium high heat with coconut oil. Pour desired amount of batter onto skillet and cook until golden or color desired. Enjoy!

Besides the temperatures taking a plunge…

We took the plunge….and finally purchased a Vitamix!

EEK! A VITAMIX!

I’ve been lusting after this bad boy for almost a year and a half. Even after reviewing all the videos and blogger ratings over the past year, I was still blown away by how powerful and smooth anything you put into the Vitamix in person comes out. I’m talking reallyyyyy smooth! Superrrr smooth!

I’ve been craving hummus, perfect excuse to use the Vitamix, right? Right! The blender box included an entire book of various recipes you can use the Vitamix for. hummus was among them and I already had all of the ingredients. So blend away I did.

The Vitamix was so quick to use and just as quick to clean up afterwards. Seriously topping my favorite kitchen gadgets! I cannot wait to find more excuses to blend in this powerful guy. I’m open to suggestions and recipes please.

Can’t wait to debut our recent grownup purchase soon! Hints it belongs in the kitchen. Lordy, you know you’ve crossed over to adulthood when your over the moon about something for your kitchen.

Making Friends as an Adult.

I found myself deep in thought, while sipping my coffee, waiting on a dear friend at our local weekend coffee spot. The thoughts deep like the swirls of whipped topping and caramel mixing with my coffee were about making friends as an adult. Let’s go one more step more and add to the complications of that… making friends. as an adult. while living abroad. I feel that in high school or even college for that matter while they are preparing you for the “real world”, they should be instructing on real world issues such as when you take that gigantic leap outside of your safety blanket (your hometown or surrounding area) what you may find yourself feeling.

I know, I know… the world’s tinniest violin is playing for me right this second. I’ll take this second to have a small (but respectful) pity party for myself, then we’ll get to moving on with this post.

2013 proved to be one of the more challenging years for me in my adult life. However during those challenges, I met an acquaintance of a friend that turned into a dear friend, a sister for life. Unfortunately, I know all to well that she is only abroad temporarily and will be moving on in the next few months. I’ll always remember a wise family member saying that quality over quantity will matter when you are an adult. At the time I remember thinking, yeah sure… then gloating about all of the “friends” that I had on my Myspace page (Don’t try to deny it..you know you had a Myspace page too). Now my 20 something self is understanding just how true that family member’s statement was. As a child, my grandparents told me that I could be-friend anyone, anywhere. The public pool, yep had a random swim buddy, the playground, yep had a tag or jungle gym pal, high-school, yep some bad gal pals and good gal pals, college, yep crazy but fun housemates. Truly I have been blessed to have met some amazing friends along the way and share equally amazing memories with each of them too.

However, over the past few years, let’s say the past three, I haven’t had the best of luck making friends since we moved abroad. I blame it on my mostly on my work schedule, and maybe partially on the fact that I have turned a bit anti-social. And introvert-ish. I’ll digress. Some of the first “friends” I made when we moved abroad turned out to be a group of ladies that belonged to a church group. Sound choice, right? Wrong…some of these women made me feel so insecure with myself. Constantly judging my knowledge of religion, my life, masking me with this toxic vibe, etc. Isn’t that comical? Ladies of the church! But at the time I couldn’t see it… Then I snapped out of it and distanced myself. I made the decision that I really longed for quality over quantity. I think that is where the fuel was added to the fire.

Don’t misunderstand my words, Mr. B and I have some great couple friends, most of them with kids too. (Apparently we are freaks for not having one by now). Ooops. Kidding! They are outstanding and we love their kids too!

So how does one make quality friends? Sometimes I wonder if I am sending out the wrong vibe? Hmm.. Really, what is the right vibe to attract quality?

Although…side note…I did take a gigantic leap and branch out last month. Yes, I made random conversation with a woman while she bundled up her baby, about politics outside of the grocery store. We ended up exchanging Facebook names and are “friends”(our generations most acceptable way to socialize, right?) Since that first encounter, almost every time I run into the grocery store to grab something we bump into one another. We talk eggplant, holidays, serious grocery chatter. This most recent encounter we actually took a step forward and decided to make a plan to meet up for coffee soon. Hopefully I do not let her down by not being able to uphold my end of conversation about breastfeeding, the homeschool, private, or public school decision. You know, whatever all of you cool moms talk about over coffee. We will see.

So…. there it is just in time for my coffee dates arrival too. I’d love to hear your thoughts.

As fast as Christmas was here, it is now gone…these next few days are the last glimpses of all the holiday decor and Christmas trees…

Sleep Eat?

Lately we’ve been watching all the old episodes of Seinfeld as we cook dinner together in the evenings after work. Can you guess who takes on the role of chef and who the sous-chef is? I’m sure your presumption is correct. Anyways, did you ever see the episode where George is in the kitchen and see’s the eclair on the top of the trash pile, obviously it looks rather delicious so he proceeds to pick it up and eat it?

Last night I realized that I had four bananas that were rather ripe sitting out the counter. I decided to just make a loaf of banana bread and use them up. It’s just so darn tasty that it reminded me of that episode. Short of wanting to dump the loaf for our own good, I know we’d be suffering from Costanza moments if I did it.

I wake up in the middle of the night and sleep walk over to the water-cooler located next to our refrigerator..what a convenient location, right? ..Oh heyyy there banana bread! Leaning over the sink (of course not to crumb anywhere) I happily shovel in two delicious bites. Fulfilled I retire back to bed. I wake up in the morning with this gross slightly recognizable taste in my mouth. I think to myself in the shower, damn Did I really sleep eat that banana bread?

Can you relate? Or is this one of those awkward non discussed topics? Well, whatever the case, I don’t have willpower when it comes to this stuff. Hence a non typical baking occurrence. Luckily there’s only one loaf, must eat and keep it out of our bee hive!

But that’s just us…I’m sure you have much more willpower and should totally bake some! Thanks baby bistro cookbook (and Mary).

Banana Bread
Slightly adapted from The Baby Bistro Cookbook

Ingredients:

4 Very ripe bananas, peeled and mashed with a fork
1 Egg
1/2 Cup packed brown sugar
1/4 Cup safflower oil
1 Teaspoon vanilla extract
1 1/2 Cups all-purpose flour
2 Teaspoons baking powder
1/2 Teaspoon baking soda
1 Teaspoon ground cinnamon

Directions:

Preheat oven to 350 degrees. Grease a 9×5″ loaf pan, set aside.

In a large bowl, whisk together bananas, egg, brown sugar, oil, and vanilla just until ingredients are blended. Next add in the flour, baking powder, baking soda, and cinnamon and stir just until it’s blended together. Pour ingredients into the prepared pan and bake 45 minutes, or until toothpick inserted in the center comes out clean.

Don’t say I didn’t warn you.

Busan Aquarium Shark Dive

EEK! I’ve been totally slacking on this blog lately! Thank you for your patience during my brief lull. I swear I’m back and refreshed and I have to say it was kind of nice to be disconnected from technology and not whip my camera out for a few weeks! Sometimes you just need that, don’t you agree?
Soooo… before getting into all the holiday jazz. What’s been going on lately in our world? Well, we took the KTX (Fast Train) from Seoul to Busan where Mr. B scuba dove in the Busan aquarium tank with sharks, sea turtles and goliath grouper. It was just as exciting for me to watch and snap away outside of the tank as he bubbled by for two hours.

Is it just me or does it seem like fall has been sticking around lingering longer this year?

No complaints in that department, I am enjoying event single delicious second of it. When I say delicious, I am talking about all of the wonderfully fall flavored morsels that have crossed my lips this season. Mmmm… pumpkin bread, pumpkin cheesecake, and of course the delicious dish I’m about to share with all of you.

Are you ready for this?

Spicy Pumpkin Chili! (BAM!) (Sorry, having an Emeril moment)

Ohhh and Don’t forget to bake up some cornbread with a nice pad of honey butter on top. Bob’s Red Mill brand mix with an added 1/3 cup of honey is a fabulous time saver if I do say so myself.

Black Bean and Pumpkin Chili
(Provided via a friend)

Ingredients:

2 medium onions, diced (about 2 cups)
2 red bell peppers, preferably roasted and skinned, cut into medium dice
1/2 a chipotle chili can (canned in adobo sauce) (Watch out, SPICY)
4 Tablespoons olive oil
2 14.5 oz cans diced tomatoes (preferably fire-roasted)
1 Jalapeno (chopped)
1 1/2 tablespoons chile powder
1 teaspoon ground cumin
1 teaspoon curry powder
1/2 teaspoon ground cinnamon
2 bay leaves
2 teaspoon salt
2 teaspoons dark brown sugar
2 teaspoons apple cider vinegar
32 oz canned black beans (rinsed)
4 cups roasted pumpkin or winter squash, directions provided below*

Serve with Cabot Extra sharp cheddar cheese

Directions:

In a large stock pot, sauté the onions in olive oil until lightly golden. Add in the bell peppers and jalapeno, and cook for about five minutes until tender. On medium heat, add the chili powder, curry powder, ground cumin, cinnamon, bay leaves, and salt, and cook for another minute. Then add the tomatoes, 1/2 cup of water and the dark brown sugar, stirring well to incorporate. Cook at a simmer for 30 minutes, stirring every few minutes and adding more water (in 1/4 cup increments) as needed. (You, want to keep things from drying out and sticking to the bottom!).

Add the rinsed beans along with 2 cups of water and cook for another 20 minutes.

Add the pumpkin and vinegar just before serving. Taste, and adjust seasoning.

To roast pumpkin or squash:

Preheat oven to 425F.

Remove the seeds and the fiber from the pumpkin and cut the flesh into chunks, leaving the skin still attached.

Mix the chunks in a bowl with 2 or 3 tablespoons of olive oil, salt and pepper. Lay the chunks on a baking tray, skin side down, and put them in the oven. When the chunks of pumpkin are soft and the edges are tinged with brown, remove from the oven and allow to cool, and scoop out chunks of the pumpkin from the skin with a fork. Measure out 4 cups of the pumpkin and save the rest for another purpose, like a salad or snacking later. Or roll like me and put in all the pumpkin. Why not? Life’s SHORT!

Happy Halloween!

I am finally back from my two week trip stateside with work and back to my dear blog again too. My trip was amazing and I would love to share it with you all so I will write a post about it a bit later.

First thing’s first! BOO! It’s Halloween! I live to celebrate holidays and look forward to and the traditions we continue to build with each new year. There is something just so magical about the fall season where pumpkin flavored everything and mythical creatures abound, which by the way are totally my style. (There may or may not be a 63oz coffee/latte pumpkin flavoring from Starbucks in the refrigerator right now). What? I’ve told you all..I get my sweet tooth from my grandfather and all the sweets in the world never ever truly satisfy it. Speaking of which, who held out that Target has awesomely fun coffee flavors like this little guy I snagged while stateside? Candy corn?! Yum!

One of the best parts about Halloween is opening your front door to cute kids in costumes. This is the third Halloween living abroad that I’ve had the opportunity to hand out candy in our small community to the other foreigners living here as well. What a treat! Check out my two dino buddies that really had down their scary rawr!
