Rosemary in my what?

Rosemary in my COOKIES! YESSS! If you’ve been watching our Instagram account you’ve seen that I’ve picked up some new light cookbook reads. Now…I can no longer hold it in, my current cookbook obsession is, Isa Does It: Amazingly Easy, Wildly Delicious Vegan Recipes for Every Day of the Week by Isa Chandra Moskowitz! Isa seriously has me hook line and sinker with these cookies. I turned into an instant cookie monster not even wanting to share with Mr. B. My family knows I am the first to snub most chocolate off, but the addition of rosemary to a cookie really caught my attention. Oh and guess what? IT’S VEGAN!

These cookies were perfect and in every way, just as Isa described they would be, buttery, golden, and wake your taste buds up with the exotic happy marriage of semi-sweet chocolate chips and fresh rosemary. Trust me folks, be forewarned, you are going to instantly become obsessed with these cookies too!

Don’t fret if you think it’s going to be all complicated because it’s vegan and possibly an unknown territory. It’s actually really easy and we had almost everything we needed on hand already in our kitchen. I only had to modify one partial element of the recipe and that was the coconut oil. Isa’s recipe calls for refined coconut oil, I only had unrefined but didn’t let that stop me and certainly didn’t change the taste as far as I am concerned.

Rosemary Chocolate Chip Cookies

1/2 cup refined coconut oil, softened (I used unrefined)
2 tablespoons lightly packed, chopped fresh rosemary (Chop it FINE)
1/4 cup granulated sugar
1/3 cup light brown sugar
1/4 cup almond milk (or your favorite non-dairy milk)
1 tablespoon ground flax seeds (golden preferred)(I used Bob’s Red Mill whole ground flaxseed meal)
2 teaspoons pure vanilla extract
1 1/3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup chocolate semisweet chips

Instructions:

Preheat oven to 350 F. Lightly grease two large baking sheets.

In a large mixing bowl, use a fork to beat together the coconut oil and rosemary, until relatively smooth. Add the sugar, and beat for about a minute.

Add the non-dairy milk and flax seeds, and beat once again, for 30 seconds or so. Mix in the vanilla.

Add about half the flour, as well as the salt and baking soda, and mix well. Add the remainder of the flour, along with the chocolate chips, and mix well until it looks like, well, cookie dough.

Scoop about 2 tablespoons of dough onto cookie sheets in rounded spoonfuls. Flatten gently with your hands. Bake for 10 to 12 minutes, until bottoms are golden brown.

Let cool on sheets for 3 minutes or so, then transfer to cooling racks to cool the rest of the way.

Not only is rosemary for remembrance, as you may have read in my prior post, our friends departed Korea earlier this AM and mother Korea decided to surprise them one last time before they were on their way… SNOW! It was surprisingly a decent amount of snow that settled in below on our streets, sidewalks and trees. I love looking our windows onto the glittery white rooftops munching on a cookie.

Happy Halloween!

I am finally back from my two week trip stateside with work and back to my dear blog again too. My trip was amazing and I would love to share it with you all so I will write a post about it a bit later.

First thing’s first! BOO! It’s Halloween! I live to celebrate holidays and look forward to and the traditions we continue to build with each new year. There is something just so magical about the fall season where pumpkin flavored everything and mythical creatures abound, which by the way are totally my style. (There may or may not be a 63oz coffee/latte pumpkin flavoring from Starbucks in the refrigerator right now). What? I’ve told you all..I get my sweet tooth from my grandfather and all the sweets in the world never ever truly satisfy it. Speaking of which, who held out that Target has awesomely fun coffee flavors like this little guy I snagged while stateside? Candy corn?! Yum!

One of the best parts about Halloween is opening your front door to cute kids in costumes. This is the third Halloween living abroad that I’ve had the opportunity to hand out candy in our small community to the other foreigners living here as well. What a treat! Check out my two dino buddies that really had down their scary rawr!

Grandfather’s Granddaughter

A great man once told me, “Take a handful of mixed jelly beans with some peanuts and pop them into your mouth for a sweet and salty combination.”

There is no denying where this sweet tooth of mine comes from.

Pumpkin Ice Cream

Ingredients:

1 can of coconut milk

1/2 cup puréed pure pumpkin

1/4 cup pure maple syrup

1 teaspoon vanilla extract (Oops, I forgot this in the photo)

1/2 tablespoon pumpkin pie spice

Directions:

Combine all of your ingredients and mix well with a whisk. Whisk, whisk, whisk. Pour everything into your ice cream maker and hit start. Pop into the freezer a bit longer.

Done, easy as that! If you desire sprinkle with a few chopped up pecans and cinnamon. Mmm!

No, Halloween didn’t come early.. that isn’t some scary Witch waiting by the oven.. It’s all nat-ur-allll me!

Pumpkin Sticky Buns

Thankfully this isn’t live TV. ha ha! So you all will never really know.

Goodness, before you know it… “just hear those sleigh bells jingling, ring ting tingling”..

Sorry, I couldn’t contain myself. But really.. it’s right around the corner. I couldn’t be more delighted! We Bees have so many blessings to celebrate this year.

My heart skips right out of my chest when I think about how much I love to give gifts, send out greeting cards, see the lights, decorated trees, capture memories on my camera.

Oh, and of course SEEING our family and dear friends too!
