Saying Buh-Bye not Goodbye

“Make new friends, but keep the old. One is silver, the other is gold.” LOL! That song reminds me of when I was a little girl and in Brownies, the younger aged little ladies of the Girl Scouts. Yup, I was a cookie working sales professional with my sash and all.

I don’t know why, but these photos jogged some suppressed memory of my childhood. Hence the song. These were taken at dinner tonight. While the dinner was certainly delicious and the company was excellent, my heart and head were on overload. Our dear friends, the P family, currently in the military are leaving Korea very shortly. They will move onto their next duty station and this was one of our last buh-byes.

I know that no one said it would be easy. Actually, sometimes it’s quite hard. Yes, I admit it…living abroad can be hard! It’s not like when you were a brownie, or in grade school. You are an adult, meeting people, getting to know them, let them into your life, trust them…It takes time.
All the while, you pack up, you move, you unpack, you live, you make friends, they pack up, they move, and so on. So, when you meet other foreigners or couples, in the back of your mind you know it’s not a permanent state, but you try not to let it get to you. You try to think positively and be grateful that your paths crossed in both of your lifetimes. However, you are human. Being human means that you have those days or moments where it does get to you.

People are going to move in and out of your life. Often times it is very quickly, depending on when the timeframe you meet them was. It’s such a bittersweet feeling. The one thing that I find myself clinging onto for comfort is, knowing that we have friends that are spread out across the entire world. When we find ourselves in their parts, or them in ours, we know we will always have local tour guides to navigate the area with.

P family, Best wishes! May this new beginning bring your family success in everything that you do! Until we meet again! We miss you dearly already!

Strawberry Pie

It’s early Wednesday morning, our home is very silent, very still, very peaceful. Only the stir of Bean cat can be heard. On a day like today with the tension so high in North Korea, silence and peace are truly a blessing.

Today is really like most mornings here. I wake up earlier than Mr. B so I have that morning 30 minutes to an hour of me time all to myself. I start-up my little K-Cup coffeemaker, fix my breakfast and sit at the bar in our kitchen. Sometimes I check work e-mails, I know its sick but I like to know what I am walking into for the day, sometimes I catch up on my reading, other times I pull up my fellow bloggers, or even muddle through my personal e-mail. I am telling you, that box is almost a lost cause at this point.

This mornings me time includes, enjoying a slice of my grandmothers strawberry pie topped with coconut whipped cream. I like to live on the edge every once and awhile. Shake up my fruit and oatmeal routine. Eat my favorite course first thing in the morning, dessert!

I might have mentioned this in the past, but I was told my late great-grandmother liked to enjoy her dessert before her actual dinner. She said that she wanted to enjoy it and make sure that she had room to for her favorites first. Not only was she a dearly sweet woman, but she was completely onto something! Truth be told, I feel 100% the same way! There is no written rule that says we have to have our salad served first at dinner, right? So, why not have a nice slice of pie at breakfast? Plus its fruit pie, making it even more 100% perfectly acceptable in my book.

So if you are like me this morning and you are planning out the meals for the following week. Go ahead and add this little recipe to the list! Make sure you live a little on the edge too, throw caution to the wind and have a slice for breakfast.

Oh and feel free to dabble a little coconut whipped cream on top too! MmMMmmm…Cheers to a savory me time wherever you are!

Strawberry Pie

For: 1-9″ Pie

Ingredients:

1 9″ Pie shell
1 Cup water
1 Cup Sugar
2 Rounded Tbsp Cornstarch
1 Small package of Strawberry jello
5 Cups Strawberries

Bake pie crust in oven until brown. *You can use a pre-made or frozen pie shell.. or my grandmothers to add a little junk in your trunk. (We are talking crisco and all!)

Cook until the following come to a boil:
1 Cup water
1 Cup sugar
2 Rounded Tbsp cornstarch

After ingredients come to a boil: Put 2 Tbsp strawberry jello in a cup and add 2 Tbsp HOT water to dissolve the jello. Then pour into boiled mixture above. Now let everything cool completely.

In the meantime start cleaning your 5 cups of fresh strawberries. Cut the strawberries into pieces.

Once the stove top mixture has cooled completely, place the strawberries into the mixture and coat well. Then pour all into the bakes pie shell. Keep it in the fridge until ready to enjoy.

Coconut Whipped Cream

Ingredients
1 (14 oz) can of Coconut Milk (I used GOYA)
1 Tsp vanilla extract
1 pinch of pure sugar cane

Directions:
Place the can of coconut milk in the refrigerator overnight.

Following day, open can and spoon out the thick, semi-hardened white part off the top, leave the watery remains behind in the can.

In a large mixing bowl put your coconut, vanilla extract, and sugar together. Whip ingredients on high until medium/firm peaks form

The whipped cream will last a few days, may need re-whipped for nice peaks.

Grandma L’s Pie Crust
*Makes 5 single pie crust (freezes well too!)

Crumb the following ingredients together with your hands:

5 Cups of flour
1 3/4 Cup of crisco
Sprinkle of salt

Then add in 1 cup cold water.

Again mix ingredients together with hands to make balls; flour surface, roll our thin. Flour as needed. Roll out round then afterwards fold in half and lift into your pie plate. Then take a paring knife and cut off the extra around the edges. Then pinch the crust.

Bake at 400 Degrees for 20-25 minutes. Keep an eye on it to make sure it gets a nice golden brown color, but not burnt.

Saturday morning I was out the door before the sun peaked the horizon behind our apartment. I had a train to catch for a hair appointment in Seoul. I could already tell today was going to be a good day. The air was much warmer than most mornings in April.

I couldn’t get over how green everything was from the rain we had over the week. I literally walked around with my head in the flowers. Snapping pictures every few feet. I would have drove Mr. B completely batty. To say I took full advantage of my day alone is an understatement. Days like this are what I live for, why I fell in love with living abroad. I can’t really explain the feeling that comes over me, it’s just a strange comfort. Whatever it is, I hope to always hold on to the feeling within me.

After my appointment I sought out to find the kimchi pot lady and her little shop located near the US Army Yongsan base. I was so proud of myself finding the location on my own, however, the shop was closed! No dice on this plan. You have to know by now that I typically always try to have a plan B in the event of such luck.

Ajoshi, to Insadong! I caught a cab and went to Insadong. Stumbled upon homemade vanilla bean soft serve ice-cream. Found the little somethings that I was looking for and a summer scarf! Mission accomplished.

On my way to locate subway line 1, I found a vegetarian restaurant. I saved the menu you to share with you all. Again, totally taking full advantage of my alone with me time, of course I ate there.

As you can see the restaurant is called Maoz, and I must tell you this was my very first experience with trying a falafel. what’s the verdict? Pretty tasty! For those of you unfamiliar with what a falafel, it’s a deep-fried ball made from ground chickpeas, fava beans, or both. Usually served in a pita bread, which acts as a pocket, or wrapped in a flatbread known as lafa. Maoz served their falafel balls in a nice fresh pita. The best part is after they fry and stuff your pita with the falafel, you head to to the topping bar and create the rest your way. You top with salads, pickled vegetables, hot sauce, and drizzled with tahini-based sauces. MMmmmm!

The only disappointing and confusing part to me is that the menu serves kimchi and bulgogi. I’m not certain but the last time I checked these two foods were not vegetarian friendly? Also, the toppings bar didn’t include a typical eggplant or tahini option. Otherwise, loved it!

After my late lunch I decided it was time to catch the subway back home.

When I got home I decided to check on our patio garden I believe we mentioned it few postings back. It had taken me a little time to find a long window box to grow all our veggies. Finally, after endless searching I gave up, did some improvising, used Mr. b’s handy work, and atlas I had something to work with. I was delighted to see that We now how little sprots poking up. I’ll keep you all posted as our garden continues to grow.

Blossoms

Today, while most of Korea was still sleeping (including Mr. B), I snuck out into our apartment complex and snapped a few photos of the cherry blossom trees before the rain forecasted for today and all of tomorrow set in.

Yes, I graced the world with my bare shins for the first time in at least six months.
While snapping I realized that my legs were as white as some of the blossoms I was capturing.
But, I didn’t care. (Don’t worry no scary photos included!)

Honestly, I am not sure what my obsession with these trees are. I know I drive Mr. B crazy when we are walking under them and my head and eyes are pointed straight up to the sky with my feet barely shuffling. I’m mesmerized by the beauty of the blossoms. When the wind blows, the delicate flowers fall from their branches, covering the earth like a blanket of pink snow. It is such a magical experience that I look forward to each Spring.

I made it in just enough time, as I was wrapping up I felt tiny spritzes of rain starting to fall from the sky.

A Baby Shower

You know what?
Baby Showers are kind of the best…
You get to decorate your special location party place all whimsical and what not,
Stuff it full of fun people.
Eat sweets
And gush over the baby and parents to be.
What a wonderful twist of spirits ending a hectic work week.

Tonight we celebrated with the M family as they eagerly await the debut of their sweet boy A.

All week at work the Korean ladies have been discussing what exactly a baby shower is. “How do you shower the baby before it gets here?”, “what does it mean to shower a baby?” Honestly being one of three American women at my work, we never gave it much thought that a baby shower wasn’t something typical the Korean culture might celebrate.

Tonight one of the Korean ladies I worked with decided to celebrate with us and see exactly what a baby shower was like. We played games like guess what chocolate was mushed in the baby dipper, timed fill in the nursery rhyme, measure how round the parents to be standing together are, blindfolded feed the “baby”, and see who can drink apple juice out of the baby bottle the fastest (pretty hysterical to watch!). You know, all the works.

Being a foreigner in Korea you tend to forge together and make “families” with the people you go to church with, work with, are friends with. These people help bridge the gap and make home feel a little less far away.

We ended the night with gift opening, and of course CAKE! The parents and big sister to be were so thankful and appreciative of all the love and support displayed in that room tonight.

What a terribly fun night!

What are the Bees to do with themselves when their original plans fell to the wayside because of mother nature’s indecisiveness?

Well, of course we just don’t let it get us down! Ha, that’s right! (Enter in a judo-chop) Take that mother nature! 😉

We celebrated our good friends birthday this weekend with dinner and drinks at Zelens (Bulgarian cuisine). We walked around Itaewon, where they showed us a hidden little gem called the Hidden Address (no pun intended). The Hidden Address is a vintage shop with a little coffee shop too. It really is a hidden address, located off the beaten path of the main street flowing through Itaewon. We loved it! Everything from the look of the building on the outside to the clean style inside called out to us. Thanks for sharing with us guys!

Throw in a morning waking up and seeing snow on the mountain! Yes! Snow! Comeeee on paaaallleeeaaasseee! Where is Spring?! The grandparents told us it’s been in the 80’s (and don’t forget this is central PA we are talking about).

Back at our place, we met up with some more of our friends this weekend and filled our bellies with some Budae jjigae. We couldn’t not think of anything more perfect to eat with the craziness of the weather. (Double negative-our high school english teacher’s ears are currently burning). The soup was awesome! However be prepared to smell like garlic the rest of the day. It worked out well for us Bees, we both smelled pretty ripe, however we smelled ripe together so it didn’t matter. If you remember from an earlier post Mrs. B ate Budae Jjigae in Uijeongbu, where the soup is pretty famous. This soup is MMmmmmm Mmmmm good!

Patience

Sometime…I just don’t have it.

What an interesting and busy weekend it’s been! Mr. B had meetings all day Saturday, and I had a hair apt in Seoul. The day started early, catching the train at 7:30AM in Dongducheon to make it down to Seoul by 9:30AM. Made it onetime no problem! That’s the greatest thing about Korea, you can almost set your clock to arrivals and departure times of the public transportation methods. I used knowing the departure times to my advantage and after my appointment I had some time to kill before I had to get back for a St. Patricks Day work function. Perfect for a nice leisure walk around the Myeong-dong shopping area. (sorry no new pictures snapped of the hustle and bustle of the shopping district).

Sunday, no rest for the weary. Okay, maybe just a teeny little more for me than for Mr. B. We headed down to Songtan Saturday night to grab a hotel room so that we didn’t have to wake up as early. Mr. B. continues to move full speed ahead with his PADI certifications, he had to assist with instructing newbies. I had all intentions of joining him in the pool, however when the alarm went off at 6:15 my body had other plans. I was tired, exhausted, drained! Whew, is this getting older? Ha Ha! Just kidding! I think the go, go, go from the week and Saturday finally took it’s toll. I casually woke up at 8:00AM, ate some breakfast, walked to Mr. B’s car to fill up on gas, and picked up some groceries.

We’ve been watching the weather back stateside. It sounds like Spring has truly sprung! As for the weather here… Well…that’s a bit of a different story. We have been all over the charts with our temperatures.

Last weekend We were in wool sweaters, winter coat, ear muffs, and mittens. This weekend it is oddly warm and sunny, no complaints here! Saturday made for a beautiful St. Patrick’s Day! I only wish we could have seen more green, yes…besides the green shamrock attire, beads, and beer. I’m talking about the leaves, grass, and beautiful spring flowers!
