Picnicking in Paris

I remember the moment we were driving into the city from the airport and I was getting glimpses of the Iron lady standing proudly as we zipped off to our hotel. I started to get teary eyed because I couldn’t believe that moment was real, I was seeing the Eiffel tower in person!! Lol then I noticed the big ball hanging from the center of the tower for the French open. (Mr. B the comedian refers to this ball as the “truck nuts”.) Regardless those glimpses were so enchanting!

The morning of our anniversary we woke up and enjoyed drinks at a local sidewalk cafe. It was lovely just taking our time, enjoying the perfect springy weather with no real rush in our schedule.

From there we leisurely strolled to the Eiffel Tower to purchase our tickets and climb up the steps. Luckily we went early enough there was essentially no line, nor wait. Tip: If you can, take the steps! It’s an awesome workout to all the French food you know you’ve been pounding during your stay, the views are just incredible, plus you can save a few euros too!

We ascended up until we couldn’t anymore. From that point we took an elevator, got out looked around on the first observation deck, than took another elevator to the very top. When the elevator doors opened, I think I recall having to pick up my mouth up from the floor. Again…. These views! Magical!!

After our crazy hike up the tower, we strolled to a near by market and grabbed some goodies (Baguette, wine and macaroons)for a picnic to continue with the celebration of our wedding anniversary. I come from a long family history of picnickers. In fact, my grandmother would put together what I remember as a little girl, some rather lavished picnics and tea parties. So you can say there is something about a picnic that just makes my heart happy. I knew as cheesy as it might sound, when we were going to Paris, we had to picnic under the Eiffel!

Looking at these pictures again takes me away and makes me feel like it was only yesterday that I was lying under the tower on a beautiful spring day enjoying a delicious picnic at the Parc du Champs de Mars (Park of the Field of Mars) with the Man of my dreams. Someone please pinch me, I need to snap back to reality….

Later that evening after dinner we made it a point to stroll back to the park near the tower, watch the sunset and catch the evening show of the tower sparkling. We snagged a park bench to ourselves, people watched, avoided eye contact with the wine and selfie-stick peddlers, and enjoyed just being in that very moment together. Cheers Mr. B!

Backpack Bees First Annual Supper Club

The only thing that seems to be regular around here is my lateness in blog post lately. EEK! So what have you been up to and what in the world have we been up to? Well, I can fill you in on us and you’ve got to leave us some comments below on you. Lets see… Ah! We hosted our first annual supper club at our place last weekend.

Yup, we gathered up 7 sort of strangers around our wooden table in our cozy little South Korean apartment, added a touch of good tunes- mind you it has to be an excellent mix, had oodles of laughs, kept the wine glasses filled, took a heavy dose of creativity and openness from both the host and the supper club goers.. and welcome to the Backpack Bees first annual supper club! (Sounds like the opening of the The Real World , right? LOL..Na…nowhere near as dramatic).

We had these bigger than big ideas to whip out our KitchenAid Ravioli Maker and make homemade ravioli. Pretty awesome, right? Right and it was! Let’s fast-forward to the actual day of the supper, when we quickly realized we had never even used our ravioli attachment… oops.. How hard can it be? I mean we used the pasta attachment for spaghetti before. Easy-peasy!

HA-HA..well in the end the pasta came out delicious but I’ll keep it real and give you the backside of the story. Mr. B whipped up an excellent homemade tomato sauce and the ravioli vegetarian filling (ricotta, spinach and shiitake mushroom). Then moved onto dredging the eggplant into a Smoked Paprika breadcrumb mixture, later to be deep fried. While I on the other hand was struggling with the dough, on the verge of almost a mini-panic attack. Thankfully in walked two of our dear friends with vino, smiles and helping hands. Together we all quickly went to town manning almost assigned kitchen stations and managed to pull it all together. Thanks again guys!

Savory: slow-cooker Wine-O chicken

We are always searching, or trying to create an easy but delicious dinner to throw together during the workweek. Here’s a recent one that we thought was certainly worth sharing. It’s a must if you are a fan of fresh rosemary, onions, garlic and wine! Come onnnn who here isn’t a fan of wine?!

Slow-cooker wine-o chicken
Cooking Time: 4 hours on High; or 8 hours on Low

Ingredients:

2 Cornish Hens – thawed, (Don’t forget to remove the giblets!)
4-6 Sprigs of fresh rosemary
2 Medium sweet onions
8 Cloves of fresh garlic, outside skin removed
A few pads of butter or margarine for rubbing skin of hen
Salt and pepper to taste
1 Bottle moscato wine, or your favorite white wine
1 1/2 Cups Chicken broth

Directions:

First, rinse clean and pat the hens dry. Next slice the onions to your desired thickness and place as many as you’d like at the bottom of the slow-cooker. Then throw in 4-6 cloves of garlic and several sprigs of the rosemary, as well. (remove the woody stems prior to serving.)

Stuff cavity of each hen with following: 2 slices of onion, 2 cloves of garlic, 1 sprig of rosemary. Next rub the skins of the hens with butter or margarine. Add the desired amount of salt and pepper to the skin of hens on both sides.

Lastly, place both hens, breast side down, into the slow-cooker. Add wine and chicken broth. Cover and cook on high for 4 hours, or on low for 8 hours, making sure the internal temperature of each hen reaches 165 degrees fahrenheit.

What The Wang Chung?

Everyone has some freakishness they rather keep to themselves, right? Something embarrassing about their existence that they would never openly admit…today mine comes in the form of my Korean co-worker catching me singing out loud “Everybody Have Fun Tonight” by Wang Chung… WHAT? Yes… me… No clue where it came from. I completely blame it on 94KX. Central Pennsylvania folks you know the terrible local radio station that I speak of. Somewhere Wang Chung went to craving spicy coconut lime shrimp for dinner. Yeah… sort of all over the place when I think about it? Whatever it was, I went with it.

This succulent spicy shrimp is quick to whip up on the whim and big on flavor! So….”Ev’rybody have fun tonight!”

Spicy Coconut Lime Shrimp

Ingredients:

2 Jalapeno peppers
1 Lime, zested with juiced
2 Garlic cloves
1/3 Cup sweetened shredded coconut, heaping
1/4 Cup coconut oil
1/4 Cup soy sauce
1 Pound cooked medium shrimp

Instructions:

Combine first six ingredients in Vitamin or food processor; blend throughly. The consistency will be thick. Place the shrimp in a large bowl. Pour in the thick sauce over the shrimp and toss to coat. Cover and allow to marinate at least 1 hours.

Cook shrimp on the stove in a skillet, turning frequently until nicely warmed throughout, about 10 minutes.

Of course any excuse to eat roasted garlic too!
