Angry Shrimp

Funny story….we thought these shrimp were really ANGRY after we cooked them one night last week. Yes, so much so we thought we had food poisoning from these bad little as$ suckers. No bueno! After a reallllyyyyy rough weekend we Bees are recovering slowly but surly.

I felt like Monday morning came way to fast and way to early today. I picked myself out of bed and went to work all responsible like, only to find out my co-worker came into the office incredibly ill and showing the same symptoms that we had over the weekend. AHH! Attack of the angry shrimp? Nope, he didn’t have any of our angry shrimp. Ohhhh noooo even worse, STOMACH VIRUS! Yep! Ew!

Well now that I’ve been living on toast, tea, slowly transitioning over to soup and graduating onto a grilled cheese sandwich, I think it’s time to share the angry shrimp recipe with all of you. Not to mention that it’s a little victory to even be able to fathom the very thought of anything food related after this weekend.

Pair with a nice cool simple cucumber salad and keep those hands washed!


Angry Shrimp
Slightly altered from: Epicurious


2 tablespoons pepitas
1/2 cup golden raisins
2 tablespoons olive oil, divided
3/4 cup diced white onion
1/4 cup dried cherries, chopped
2 teaspoons chipotle powder
4 teaspoons chopped garlic, divided
1/2 teaspoons ground cumin
1/2 cup Triple Sec liqueur
20 ounces low-sodium chicken broth
1 tablespoon cornstarch
2 pounds medium-large shrimp, peeled and deveined, thawed if frozen
1 tablespoon orange zest
6 cups leafy spinach, chopped
3 cups cooked brown rice


In a small pan over high heat toast the pepitas until lightly brown, 1 to 2 minutes. In a food processor or chopper, puree raisins and 1/4 cup water 1 minute. In a large pan over medium heat, heat 1 tablespoon oil. Add onion and cook about 4 to 5 minutes. Stir in raisin puree, cherries, chipotle, 1 teaspoons garlic and cumin; cook 1 minute. Add in Triple Sec and cook, stirring, until alcohol is cooked out about 1 to 2 minutes. Add chicken broth and bring to a boil, then reduce heat and simmer. In a separate bowl, dissolve cornstarch in 1 tablespoons cold water. Slowly add in cornstarch mixture to broth mixture to thicken. Reduce heat and simmer mixture 10 minutes. Add in shrimp and cook about 5 minutes, or until pale white. Stir in fresh orange zest; season to taste with salt and pepper. Transfer shrimp to a covered bowl and set aside. Lastly, in a pan, heat remaining 1 tablespoons oil. Cook spinach and 3 teaspoons garlic, make sure to stir until spinach starts to wilt, this will be about 3 to 5 minutes. Strain all spinach juices and combine in with brown rice. Plate rice mixture and top with those angry shrimp.


Sob Story

Did you see the latest Instagram Backpackbees photo? Yes… that’s a chair that sits in the lobby area of work that a parent let a little Picasso doodle all over with crayons. Yikes… That’s not even the sob story piece of this blog. It’s been a pretty rough week in general, but never in my twenty something years on this earth have I ever experienced tears while chopping my onions, that is until tonight. Can you believe a teeny tiny shallot was the one to do me in? The tears just streamed down my cheeks as I chopped as quickly as I could. Seriously it was as if I were sobbing. Of course I had to pause intermittently because my eyes were on fire and walk away from the cutting board, but I returned as quickly as I could to get the little guy prepped for our dinner.

What about you, are your eyes sensitive to onions? Intrigued, also waiting for Mr. B to finish up cooking the chicken, I looked it up on the internet and found that the syn-propanethial-soxide that the onion releases as a form of gas when cut into causes the eye irritation to some. It then went onto say that a good onion cry, though not hormonal or emotional, often makes people feel better afterwards. As silly as it sounds, it sort of did….

Wellll….. maybe it was just the excitement and anticipation to dig into this meal? Or, maybe it’s that we realized it’s Wednesday and that means we are closing in on another weekend!

The recipe was slightly altered from Iowa Girl Eats.


5 Slices turkey bacon, chopped
4 Chicken breasts, chopped
salt and pepper, to taste
1 Tablespoon butter
1 Shallot, chopped
3 Cups white button mushrooms, sliced
6 Cups fresh organic Korean spinach
1 1/2 Cup half & half
1/2 Cup grated Parmesan cheese


First cook bacon in a large skillet, cook until crispy. Not much grease, if any is left behind from the bacon, don’t bother wiping out, continue on with cooking chicken breast in same skillet to gather any remaining bacon flavors.

Season to taste chicken breasts with salt and pepper then add to skillet and sauté until no longer pink. Remove off to side and cover with foil to keep warm while you cook the rest of the meal.

Next, melt butter in skillet, add shallots and mushrooms, season to taste with salt and pepper, and then sauté until mushrooms are tender. Throw in spinach then cover and sauté randomly until just barely wilted. Add half & half  and cook until the sauce is thickened, after thickened, stir in grated parmesan cheese.

Last but certainly not least, arrange chicken on your plate,  pour sauce on top and sprinkle with cooked turkey bacon.

We enjoyed with twice baked potatoes and a nice glass of refreshing wine.

On Eating With People I Adore

The past three weekends have practically begged me to snap photos it in all its brightly orange and deep burgundy gorgeous glory.

Would you look at those colors? I mean goodness!

As I get out and walk with the leaves crunching underneath my boots, I think to myself how I truly have a Pennsylvanian soul. There’s something about us girls from the North. I look forward to my four seasons. Scratch that… I LIVE for my four seasons. Just about the time I am almost ready to throw my hands up and surrender to the season, it sparks a magical little hint that something new and exciting is on the way. On the way, dare I say precious little white snowflakes? Eek! (Hot drinks, cheerful little dancing flakes, a Charlie Brown Christmas, Christmas tunes, and twinkle lights!).

Okay, let’s get back to the weekend.

I haven’t had much time to really breath and enjoy the past few days. I feel like I NEEDED this weekend to be open, go with the flow, no plans, the feeling of rejuvenation!

Mr. B’s been pretty busy lately- which is fine, so it’s fun to be able to spend 2 1/2 solid days with my two lovely lady friends!

Coffee Date? Loving up on one of the sweetest baby girl’s, Taking a short train ride into the city of Uijeongbu? A Pasta and wine dinner date at Padella? Such a novel idea!

Jeju Island Getaway

This past weekend we got the opportunity to again enjoying a brief getaway on the beautiful volcanic island of Jeju, only this time for a low-key friends meet up/ no real game plan kind of weekend.

Summer is officially over and clearly Fall is knocking on the door. Even on the tropical like island of Jeju the much brisk temperatures are starting to settle it. Saturday was dreary and rained, or misted rather, but we made sure we didn’t let the weather stop our fun. We took full advantage of checking out all the places that our group didn’t get to see the first time each of us visited Jeju in the past.

Get ready for some Korean cheesiness. Ready? Jeju Island Teddy Bear Museum….yes… told you.. we are clearly all about the cheesiness here, O’ Sulloc’s tea Plantation, Manjanggul Cave, Cheonjiyeon waterfalls, Jeju Starlight World Park and Planetarium, and Jinjie Cave.

We sipped green tea, coffee, ate some bingsu, ate green tea frozen yogurt, hiked part of the island coast where we got to check out 15 man-made caves ranging 15metres wide and 20metres long leftover from the period of when Korea was under Japanese rule, had the hubby believing that some of the teddies in the teddy bear museum were recovered and came from the Titanic, visited chocolate land where we later discovered we overpaid and were taken on the price of our boxes of chocolate (live and learn), and of course ate the Jeju speciality Jeju Black Pig (heuk-doe-ji). Overall a good time!

Other Side

The original plans were to dive this weekend at the east coast, relax, stroll on the beach and get carried away with a good book. That fickle mother nature had other tricks up her sleeve. The waves and wind were definitely ideal for a surfer, not a diver. We decided to improvise, road trip and meet up with a new couple along the way.

Part of our unplanned road trip led us to visit the most northern point of South Korea’s east coast. The area we traveled was the Goseong Unification Observation Centre. If you recall from past post, we’ve seen the DMZ from the west coast along the 38th parallel, however this was the opportunity to check it out from the east coast. The observation platform is a small educational center about the North with the history about Korea’s divide. I felt like it was much more relaxed and less tense (if that is even possible) in comparison to the west coast observatory. For example you can drive your own almost right up to where you will get to view North Korea!

From the platform you get to see Mount Geumgangsan, Haegeumgang, and islands of the coast in the distance. I stood there for a long time just staring through the telescopes to the other side of Korea. I couldn’t stop thinking about how beautiful the beach and view were but how ugly the other side truly was.

The holiday weekend wasn’t a complete bust, Sunday the sun greeted us bright and early, Mr. B got in some diving while I returned to my original plan of getting wrapped up in my book and taking a stroll along the beach. This day was truly a reminder of how life is good.

Happy Labor day to everyone out there, enjoy! No cookouts on the grill for we Bees this year…but I do see Johnny Rockets in our near future… 😉

Around The Table

F o o d. F o o d is four little letters that make up a word, that is sometimes overrated but often underrated. Think about it, no matter what language you speak, where you come from, or how far you go, food is made as an offering, an extension. Its used when words cannot be expressed due to sadness, or in times of celebration and happiness, or even as simple as when there is a language barrier. Ah food.

I turned my friends down earlier in the week when invited out for dinner because I was just to sad, upset, and feeling guilty to even fathom enjoying fun or enjoy food. I cashed in my rain check this evening and tonight I met around the table with a few good friends. We of course dined and enjoyed Saengsun jun (Korean pan-fried fish). After a really hard week, it was nice to just sit back relax, share memories, chat, and dine together in one anthers company at this dinner table. The older I get (I can say that now with another birthday under my belt as of August 14th) the more I realize how much I love to gather around the table with my family and good friends.

I even took along my camera to capture the moment and share with you all. Enjoy!


Living for the Weekends

“Everybody’s working for the weekend” Do you remember that song? Or, am I shamefully dating myself? Truth be told, I’ll admit… I LIVE for the weekends! Saturdays, Sundays, yeah…all equally loved in my book!

Most weekends I sleep in until 8:00AM-8:30AM-ISH then I hop right up and into making my breakfast. Easy decision for me, due to the fact that I more than likely thought and contemplated what I would make myself in the morning the night before. Wow, I am really showing my true oddballness on this blog post, huh?

I stroll into the living room with my breakfast and hot tea,(shushhh don’t tell Mr. B, he’s typically still checked out in sleepy land), buried and wrapped by tightly with my blankets I sit in our over sized chair with Bean cat. I then proceed to answer my question of the day book, blog, and eventually Skype with my Grandparents. I love it! I love that I have somewhat of a routine that I look forward to every weekend.

Splendid Extended

How was your weekend? I hope it was splendid extended weekend!

Ours surly was!

Some of the highlights from the weekend included:

-Juicing. I’m getting more creative, trying to incorporate sweet potatoes, ginger, etc. so delicious! I can’t help myself. Mmm! If you have a juicer, please share your thoughts and favorites with me. Pretty please and thank you!

Apples, cinnamon, and fresh ginger. ( Mr. B loveed this one! )

-Hair trim. Goodness, my mop desperately needed one! Fuzzy ends…need I say more? Pretty typical trip, except….drum roll….I drove myself for the very first time! No train this time around. If you ever get the chance to drive, or take a taxi in Seoul, you will know why this act in itself was quite the accomplishment! Mr. B was so worried about me driving alone for the first time. He made sure I had a GPS hooked up ready to go, with the route pre-programmed in too! What a guy! Thankfully
I also had a co-pilot. My dear friend accompanied me on the journey. (Girls day!). Woo-hoo! We successfully made it there and back, safe and sound!

-Skype session with my lovely Grandparents. My family always makes me feel so grounded. I treasure all the moments I get to chat with them via Skype, almost as good as being in person.

-Mr. B came home from being away on the East Coast…Hallelujah! Miss that guy a smidge when he’s away.

-Tied up some more of the loose ends of the Cambodia trip with Habitat for Humanity in March. Visa, plane tickets, a bit of research…check, check, double-check.

-Cooked up some fantastic homemade beef stew with Mr. B. Sometimes the best creations come from on the whim ideas. We had left over beef stock from a roast, it was just fitting to make soup. Plus, we’ve still got a white winter backdrop here from our little South Korean living room windows.

Here’s to many more splendid extended weekends in 2013!
