Mallipo Beach (만리포해수욕장)

Today Mr. B did a solo exploration to Mallipo Beach (만리포해수욕장).  The weather was warmer than normal however a big storm was moving in quick.  The winds picked up and cleared the sky for a bit and allowed for some amazing images to be captured.  This beach has a large sand area that has plenty of room, waves for surfers and lots of coffee shops and restaurants.  A little bit of something for everyone.

Crabby Patties

Whooooo lives in a pineapple under the seaaaa??! Hahah sorry couldn’t resist. Did I get that song stuck in your head too?

Crab cakes. Right. Back on topic.

Crab cakes transport me right to the summers at beach with my dad and stepmom. Some of the best memories I have are those days we spent endlessly soaking in the sun, listening to the ocean waves crash on the beach. Ahhhh…. I can practically smell the sea-salt in the air!

Unfortunately I haven’t been able to join them on summer vacations these past few years while we’ve been living in Korea. I have offered the nice “tropical” beaches of Korea to them for a change-up… But… Still no dice. I wonder why?? Lol!

Anywho these memories call for margaritas and homemade crab cakes! Gosh I just love crab cakes! (Fun fact about me: I used to eat broiled crab cakes almost every Friday night, with a side of macaroni and cheese, when I worked at a Social Club during college.)

I went through our Paprika app (by the way have you guys tried that app?! It’s awesome to keep those recipes all organized, and helps you build grocery list. Plus the Mr. and I can access on ALL of our electronics!) and found a crab cake recipe a friend passed onto me sometime ago. I’m not certain where it came from, but I did slightly adjust it to more of our taste.

Let’s get cooking!

Crabby Patties:

1 pound lump crab meat drained
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1 white onion, chopped
1 egg, lightly beaten
1/2 cup panko breadcrumbs, plus additional for dredging
1/4 cup lemon juice (about 2 lemons)
2 1/2 tablespoons mayonnaise
2 teaspoons mustard powder
1 teaspoon Blacken by Old Bay
1/2 teaspoon kosher salt
1/4 teaspoon Worcestershire sauce
Lemon wedges, for garnish

Directions:

Preheat oven to 350 degrees.

For the crab cakes, combine crab meat, bell peppers, and onions in a large bowl. Add all of the remaining ingredients and mix gently until well-combined. Using a 1/4 cup measuring cup, scoop crab mixture and form patties with your hands. Dredge the cakes in panko breadcrumbs until completely covered. Place the cakes on a sheet-pan chill until ready to cook.

Bake the crab cakes at 350 for 25 minutes. You want the internal temperature to reach 165F.

Under the sea in Korea

Last weekend officially marked the opening to a new dive season here in Korea. Brrr… yes dry suits were absolutely involved, but they were troopers and still geared up and dove in.

The dive shop that Mr. B frequents has become like a second home to the both of us. We look forward to the ocean breeze on our faces and in our hair. The escape of letting the crowded city and everyday stress behind. Catching up with friends that have become like family to the both of us. It’s deeply cherished and has absolutely become a big part of our lives.

It was a special weekend as we were invited back to the opening of the shop for another year of diving. The shop’s opening ceremony kicked off with paying respects to their ancestors, Korean rice wine flowing, and a big ol’ BBQ with copious amounts of food being served (Thank’s again for grilling Jeff). It was surreal to look around that night under the big tent and realize that we didn’t all speak the same language, we didn’t come from the same countries, but everyone there all held the same passion for diving and that made everyone one in the same in that moment.

Labor Day Delay

Whoa! It’s not hard to see that I am running a week behind…again… EEK! I feel like we just try to squeeze every drop out of what is left of summer! It doesn’t stick around to long here so I feel uber guilty if we don’t get out in the evenings after work, and that is preciously what we have been doing.

Anywho, without delay I’ll get to it with the Labor Day fun!

I joined Mr. B on the east coast of Korea where he and a group of friends planned a weekend of diving. I have decided and told Mr. B that when we retire we will live on the beach or at most a block away from the beach. I couldn’t ignore my huge heart singing out relocation, to the ocean, the sand, the sounds… it just calms and soothes whatever your current mood or state of mind is and seriously, if the weather wasn’t being the biggest show off too! Not so hot with a slight autumn chill in the air. It was the most welcomed break and I took advantage of every minute it had to offer by catching up on my Kinfolk Magazine, sunning my pale leggies, strolling leisurely along the beach line. AH! Oh and then the drive home up, over and through the lush green mountains. I never imagined Korea to have the mountains that it has.

Here’s a tip…If you ever make a trip to Korea, do yourself a favor and get outside of Seoul, or whatever touristy city you choose to see the countryside and mountains too. You won’t regret it.

This morning staring starry-eyed from the balcony of our hotel, Sea Passion, we cannot wait to see everything you have to offer us!

It must be a dream…(pinch, pinch) Are we actually here? Truly we can’t believe it!

Yep, still standing here! Ah! It’s finally time to put on that sunhat, those flip-flops and sunglasses, and slather on a heavy dose of sunblock. Yes, yes, we know It’s only 8AM but we can already taste that first refreshing frozen tropical drink on the tip of our tongues.

Wait a minute…Hey! This is a tropical paradise, we’re on vacation.
