Happy Friendsgiving!

We have a lot to be thankful for this year. 

If you’ve been following along with this blog for a while, you know that our annual tradition is to have Friendsgiving, rather than a family-filled Thanksgiving, due to our logistical separations. We kept our theme to our meal to a smaller scale this year and also kept it centered around everyone’s traditional Thanksgiving fare. Eek we just get so excited for in the weeks that lead up to our dinner.

We live for the menu planning, the prep and yes, even those million little last second details that keep us buzzing around here and there. Year after year when all of our guest have left for the night, we head off to bed, we both look at one another and smile talking about how everything was so worth it in the end.

This year we hosted 8 at our table…well 9 if you are counting 😉 little Miss B. We extended our dining room table by one leaf, it worked out perfectly.

The spread consisted of: Mr. B specialty Mashed potatoes; my side of the family family’s broccoli casserole and baked corn, My in laws homemade dressing (because it’s outside of the bird) my grandmothers stick to your ribs macaroni and cheese, my great grandmothers raw cranberry sauce, my homemade applesauce made with local Korea apples, sage leek and onion balls made by Mandy, the deep fried Cajun turkey, a ham prepared by George, crescents, a spinach pie baked by Jovone, pumpkin pie, cheesecake, vanilla and sparkly golden hazelnut macaroons, and an almond raspberry cake. Using the word delicious for this feast is just an understatement!

Friendsgiving with our lovely friends was a beautiful, sweet, cranberry-kissed, happy affair! Thank you for making it another excellent memory friends!!

Gastronomic Journey in Paris

As I stated earlier we were on a gastronomic journey while we vacationed in Paris. We couldn’t wait to get our hands on fresh bread, real cheese, and a new selection of wine. I’d be kidding you if I said that I didn’t spend a large amount of time researching where we should go and eat. You saw the books, I am hardcore and thorough when it comes to my meals. I started to become a teeny bit overwhelmed by all of the choices we had. Finally after I had made out a crazy long list of where we’d go, I asked Mr. B if he’d mind just winging it when we reached Paris. Mr. B of course was up for anything and reminded me that this was again a vacation, no need to get so wrapped up in the details. (LOVE THIS MAN!)

The best advice we can give is when you go to Paris is just explore! Let your eyes and nose lead you to your next meal.

One major difference we noticed was that the entrée is a starter in France, something we call appetizers. The main course is called the plat principal, or just the plat. Dessert is of course, dessert (THEE most important thing one to know wherever you travel).

If you are curious, we will share just a few of the restaurants we frequented/ I had my camera along during our trip below. These restaurants are in no particular order. Each place was lovely, incredibly delicious, with wonderfully attentive staff making our dining experiences in France an absolute delight.

Swoonnnn… reminiscing about these places still is making my heart flutter and my stomach roar!

1. Le 7ème Vin

We checked into our hotel and after getting settled in we asked the front desk if they had a recommendation within walking distance. This was the place they sent us to. When we think of a cozy French restaurant this is the place that will always come to our minds. There are only about 10-13 tables inside. The place always seems busy with not only travelers like ourselves, but locals too. Upon entering we were immediately greeted and welcomed to a table. The menu is presented on handwritten chalkboards. It was fun to watch the staff move them around to anyone new that came in. The food was excellent! We ordered the rack of lamb with thyme. The dish was evenly cooked from edge to center, absolutely beautiful, tender, Ooooh so melt-in-your-mouth perfection. Thank you for setting the bar with our first meal in France.

2. Le Progrès

After our five mile hike up and to the Sacre Coeur we popped in for a bite to eat. We sat outside enjoying the perfect views of Montmartre. The waitress was helpful with recommendations from the lunch board. The gazpacho and goat cheese Apéritifs are outstanding here, steaks were a bit overdone even after ordering them rare, and the french-fries were perfectly crisp and non-oily. All and all not a bad choice when in the area.

3. Ladurée

I’m obsessed with macarons and now unfortunately for my husband… he is too. (SORRY) These macarons were worth every single penny when you want quality that’s outstanding with each and every bite. They had the perfect combination of texture and taste. Crispy, chewy and creamy! The staff were so helpful and kind making the entire experience that much more special for us. Go big and splurge with trying a box of all the flavors assorted. (YEP, WE DID).

4. Kozy Salon Urbain

We enjoy ADORE our coffee in the mornings so we were delighted to find a great little cafe to serve as our home away from home. The owner was incredibly helpful and explained that we could help ourselves with a plate and pick out anything that we liked while he made our coffee and cappuccino order. We felt really comfortable while we sipped on our coffee and nibbled our pastries. This cafe has free wi-fi too!

5. Crêperie du Cloître

As the old saying goes, “When in Rome, do as the Romans do…. Sooo because we’re in Paris and not Rome…A nutella crepe is a must do! We stopped in for a quick bite to eat after we did the Notre-Dame Cathedral. Everything was fast, service was friendly, and before we knew it our piping hot onion coup, croque Monsieur were just want we needed to keep going with our walk all over the city.

6. Gusto Italia

We couldn’t help ourselves! We know we should have been taking full advantage of the fact we were in France, but our nose and belly told us we NEEDED to go here. Everyday when walking by this place had the most incredible aromas wafting out onto the streets. AH! The appetizer plate with a tasting of pickled/ sauteed veggies and breads, outstanding. We ordered a pizza and also the ravioli’s based on others recommendations. The food and service were of this world! Make sure to grab dessert too! We ordered tiramisu and were blown away! Yelp recommendations were spot on!

7. La Boulangerie des Invalides-Jocteur

We grabbed our breakfast sipped our cappuccino and Americano and sat outside watching the world go by. Excellent pastries and breads! Truly not a place to miss while you are in the area. I instantly fell in love with the quaintness this bakery boasted…I mean they have pink walls! The staff were friendly, patient, and very helpful with pronunciation of each item we ordered. (HEY! we certainly tried) We ordered a praline brioche, bichon framboise, and took a baguette to go. (ORDER THE BICHON FRAMBOISE!)

8. La Terrasse du 7eme
ADDRESS: 2 place Ecole Militaire 75007 Paris, France

Convenient location just outside the Ecole Militaire Metro exit. Perfect sidewalk cafe for a late night meal or snack. We sat outside enjoying our escargot and sipped on a nice bottle of wine. Did we happen to mention we REALLY enjoyed the escargot??

9.Café de Mars

WOW! It’s hard to even begin to put into words how excellent this meal was. We were incredibly pleased with everything from the service, to the wine, to the meal. A must go if you’re in the area! If you get the chance order Terrine de lapin confit, salade de carottes roses pistachio, saumon, asperges, sucrines, verveine, Filet de bœuf en croûte, Goat cheese cake with blueberries gateau au chocolat du pasteur ! WOWWWWW!!

10. Terres de Café

A teeny tiny little coffee cafe that serves excellent cappuccinos and flat whites. When we travel we are always on the hunt for the perfect beans and most enjoyable cups of jo. This place met the criteria. Make sure to carry cash with you if stopping by, as the barista will only let you use your card if you’ve got an order over a certain total. Sit outside the cafe sipping your drinks, savoring your slice of carrot/ banana bread, and people watch before getting along to start your day.

11. Au Petit Sud Ouest

It was so nice we had to go twice! We really wanted to find a decent restaurant that foie gras while in France and out of pure luck we struck gold! We have no idea how anyone could rate Au Petit Sud Ouest anything less than 5 stars. You will meet and see both the husband and wife owners as they passionately serve food and speak with their customers. We were very luck to get a table the first time without a reservation. Do yourself a favor and make a reservation because they are always very busy. Each table has it’s own toaster so that you can toast your outstanding hearty slices of bread. From the two nights that we visited we ordered, Seared duck fois gras over apples, duck in orange sauce, Foie gras 3 ways, We also had the duck breast with mushrooms and potatoes served rare, duck cooked with green pepper corn, Trio of creme brûlée, pear sorbet. When the owner tells you that the potions are rather large…. believe her… because they are! If you order anything, order the foie gras 3 ways, or the seared fois gras over apples, they two dishes will just melt in your mouth. Now to find a place in Korea…

H2s Handmade Burgers

We have lived in Dongducheon, South Korea for almost 5 years. Believe me when I say it is really hard to find a good burger here. Don’t get me wrong, we’ve had some excellent burgers…..but in Seoul. Unfortunately, we’re surrounded by the ever growing monster fast-food chains such as McDonald’s, Lotteria, and soon to be Burger King. Sigh. These just aren’t real burgers, or even food for that matter.

On our regular evening walk last week we strolled by what looked to be a quirky little joint with a small outdoor patio situated conveniently right outside one exit of Jeihang subway. To say we were surprised is an understatement. This place not only met the burger challenge; they superseded it! The restaurant takes a step further and features a foreigner friendly menu, or as I refer to it, the meat-lovers masterpiece! It’s creative specialty combos are generously portioned are incredibly tasty, the staff were quick, attentive and friendly, plus the prices that won’t break the bank! To the owner the hygiene factor of this place was paramount, as you could easily see right into the open style kitchen. Also in case your curious about the origin of the meats, the beef is from Australia and the chicken is from Korea. Well done H2s Hand Made Burgers, well done!

Our group ordered 4 different burgers, the Hawaiian, spicy chicken burger, onion Eiffel burger, and the H2s special burger. The Hawaiian was a beef patty, pineapple, bacon and pineapple sauce. The spicy chicken burger was grilled chicken, tomato, lettuce, and 3 kinds of sauce. The opinion was to hold the mayo next time (non mayo lover in the group), or ask for a tad less. The onion Eiffel burger was a beef patty, fried onion, tomato, American cheese goodness. The H2s special burger was a beef patty, hash brown, grilled onion, bacon, and tomato. We ordered combos so each meal came with French fries and a drink. We also ordered a basket of onion rings to split at the table. Let’s talk about the french fries and onion rings….these were golden, crisp and cooked to absolute perfection! Mmmmm!

From the four of us, we give 8 thumbs ups for this burger joint! We’re eagerly planning a return and deciding what burger we will try next! Better yet….we’ve been inspired to create some of our own homemade patties. Stay tuned…

Uijeonbu: Palga

From what my good Korean friend tells me, Palga is a famous family owned and operated Chinese restaurant located in Uijeongbu city, that is well-known for its Koreanized sweet and sour glutinous rice pork, also known locally as Tangsuyuk (Korean: 탕수육, Chinese: 糖醋肉). Mmmm lets talk about the word “glutinous”. It doesn’t sound appetizing but it taste oh so good! If pork isn’t your thing you can swap the meat out for beef, or even shrimp.

I know if family is reading this post, they are a bit shocked I’m even writing about a Chinese restaurant. Why? When living stateside, every single time we’d order Chinese, or go to a restaurant, I’d get ill and have all sorts of stomach issues. Later it was determined that it was because of MSG. Anywho, if you are like me, you’ll be glad to know that this restaurant passed with flying colors. Thankfully no upset stomach to report back on.

The restaurant sits out on the Main Street and is very easy to recognize with its Chinese style that starts on the outside and continues on into the dining area. When we walked inside, the decor made me feel like we were back in China for the afternoon, possibly visiting a traditional tea shop. The wood furnishings were beautiful and overall the restaurant was very clean. There are 104 items on the menu and each one is also translated into English in case you cannot read Korean. The staff was not overly welcoming, but they were quick and attentive to us. The prices were fair and the portions plenty, so much so we couldn’t eat everything we ordered. I think it was a serious case of our eyes being bigger than our stomach.

So what did our eyes order? Of course a plate of Tangsuyuk, Jajangmyeon (Korean: 자장면, Chinese: 炸醬麵) – steamed noodles served under black bean paste (if you recall we ordered when we were moving into our new place last summer). Jjamppong (Korean: 짬뽕, Chinese name: 炒碼麵) – spicy noodle soup flavoured with onions and chili oil and various seafood and creatures (we eat this often when Mr.B is scuba diving on the east coast). Oh! can’t forget the FREE banchan! You know, the free little side dishes served in Korea that make it feel like Christmas when they are sat on your table. We had pickled radish and toasted peanuts, both dishes equally addicting!

If you are ever in the area and Chinese is striking your fancy that day… stop in and give it a try.

Backpack Bees First Annual Supper Club

The only thing that seems to be regular around here is my lateness in blog post lately. EEK! So what have you been up to and what in the world have we been up to? Well, I can fill you in on us and you’ve got to leave us some comments below on you. Lets see… Ah! We hosted our first annual supper club at our place last weekend.

Yup, we gathered up 7 sort of strangers around our wooden table in our cozy little South Korean apartment, added a touch of good tunes- mind you it has to be an excellent mix, had oodles of laughs, kept the wine glasses filled, took a heavy dose of creativity and openness from both the host and the supper club goers.. and welcome to the Backpack Bees first annual supper club! (Sounds like the opening of the The Real World , right? LOL..Na…nowhere near as dramatic).

We had these bigger than big ideas to whip out our KitchenAid Ravioli Maker and make homemade ravioli. Pretty awesome, right? Right and it was! Let’s fast-forward to the actual day of the supper, when we quickly realized we had never even used our ravioli attachment… oops.. How hard can it be? I mean we used the pasta attachment for spaghetti before. Easy-peasy!

HA-HA..well in the end the pasta came out delicious but I’ll keep it real and give you the backside of the story. Mr. B whipped up an excellent homemade tomato sauce and the ravioli vegetarian filling (ricotta, spinach and shiitake mushroom). Then moved onto dredging the eggplant into a Smoked Paprika breadcrumb mixture, later to be deep fried. While I on the other hand was struggling with the dough, on the verge of almost a mini-panic attack. Thankfully in walked two of our dear friends with vino, smiles and helping hands. Together we all quickly went to town manning almost assigned kitchen stations and managed to pull it all together. Thanks again guys!

I have to admit, the weekends are rather sacred to me. Actually, thinking about and envisioning the weekend is often the only thing that gets me through my Monday through Friday’s. I’m hopeless, I know. I look forward to that time that I can just rest, recover and reconnect with the Mr. This past weekend my special moment just so happened to be over a truly perfect dinner prepared and cooked right in our own kitchen!

We picked up this Emeril by All-Clad E6019764 Cast-Iron 2-Burner Reversible Grill Griddle, Black
for our gas stove and seared some steak. It worked out rather nicely and the sirloin was medium perfection! We then dipped the steak into a secret sauce! It’s all about the sauce, ’bout the sauce’, yah baby! (Sorry I hear this song on re-play all day at work). If you follow along on Instagram, you know about THE secret sauce. Half of me wants to be selfish and keep this sauce to myself, butttt what fun would that be? None, so of course I’ll share with all of you!

Hope your taste buds are prepared to p-a-r-t-y! I’m not the biggest meat-eater, but even my taste buds were cheering!

Seared Steak with Green Peppercorn Sauce

Ingredients:

4 Filet Minion (or your favorite 8oz cut)
3 garlic cloves minced
½ cup heavy whipping cream
1 cup whole milk lactose free
½ Tsp smoked paprika
1 Tbs Hungarian paprika (use 2 Tbs if not using smoked paprika)
4 Tbs Madagascar Green Peppercorns in brine
(use 2 if sensitive to pepper)
1 Tsp white fine ground pepper (can substitute black fine ground pepper)
1 shot / approx. 3 Tbs Sherry (can substitute a mixture 2 Tbs Brandy 1 Tbs red wine)
Course Ground Pepper
2 shallots chopped finely
Kosher Salt

Grind the following in a pestle:

½ Tsp Fennel Seed
½ Tsp Oregano
½ Tsp Rosemary

THE Sauce:

In a skillet sauté onions and 1 clove of minced garlic, do not let burn. Just before garlic browns pour in Heavy cream and milk and sherry. Add green peppercorns, 1 Tbs Hungarian paprika, ½ Tbs course ground pepper, 2 pinches salt. Reduce the sauce to about ½ original size and keep it on VERY low heat to prevent a skin forming while temps true slowly cools and helps prevent from over cooking.

Prepare the Steak: (sauce needs be ready prior to cooking steaks)

In a small bowl place:
2 cloves of minced garlic
½ Tsp smoked paprika
½ Tsp white pepper
2 pinches of Kosher Salt

Now dump in the ground pestle mixture from above and shake/ stir so the spices coat the garlic and set aside.

Now that the garlic is flavored, press the garlic pieces into the steak using your hands, or a tooth pick if there are larger pieces. Don’t be scared to get those fingers a bit messy! Top each side of the steak with a pinch of salt and coarse ground pepper to your taste.

Next, make sure the grill, or cast iron skillet is heated to med-high heat. Place steak on grill for 2 minutes (reduce time if stove temp is too high) Rotate (DO NOT FLIP) steaks 90 degrees for 1 minute.
Then flip the steak and cook for 2 minutes, Repeat and rotate the steaks again 90 degrees, cook for 1 minute. Serve & eat!

2014: A Very Festive Christmas Dinner

Celebrations and togetherness’ like this Christmas evening are dearly treasured moments in our lives.

Wowie, the incredible aromas that are swirling around our place from the kitchen, the love and laughter shared between friends that have become part of our extended family (Santa beards, elf get-up, festive glasses, Cards Against Humanity and all), the overall warmth felt in our place tonight just makes the whole night so memorable. I mean I serious wish that you had a scratch and sniff computer screen for each of these photos, better yet a sampling screen! Don’t worry, may in the new year I’ll honey-do-list Mr. B with carrying out the invention and production.

Our two dear friends came over tonight and prepared us an outstanding Christmas dinner. Thanks guys! Succulent root-beer glazed spiral ham, stuffed tomatoes and mushrooms, bacon wrapped homemade stuffing, steamed lemon pepper asparagus, roasted potatoes, mashed sweet potatoes and British sticky toffee pudding danced happily in our bellies. Mmmm Hmmm….Truly such a special gesture.

Already 2014 is coming to an end. Life really is on fast forward mode, each year we’ve got people coming and going in our lives, so it is always really nice to take some time and let people know how amazing they are and how much they truly mean to us. With that being said…

Dear Family, Friends and Neighbors (near and far), Though you might not be at our dinner table tonight sharing this Christmas meal with us, you are certainly not forgotten and are here in spirit. Wishing You All a very merry Christmas! Cheers!

2014: A Special Christmas Eve Surprise

Holidays, especially Christmas, are incredibly important and cherished to me. Even more so now that I am an adult. I often get so wrapped up in trying to make so many perfect moments, that I forget to REALLY enjoy all of the special moments that surround the holidays. Does that make sense?

Recently, my grandparents told me about an elderly woman that puts up 26 themed Christmas trees each year in her home. 26! Some of the trees have over 4,000 ornaments! Seriously, I think that this woman can relate to trying to create year after year those special moments.

Thankfully, Mr. B recognizes my struggles, knows that holidays are very important to me and knows that I look forward to family traditions year after year. This man gently guides me back onto my jolly holiday train tracks when he feels or notices me starting to derail off into an ugly tinsel mess (you know the kind…it’s the silvery stands that you find months after your tree has come down). He provides me with ever so thoughtful and delightful distractions like the one he surprised me with tonight.

At about 6PM tonight I walked through the doors and was immediately greeted by a chef whipping up something that smelled AMAZING in my kitchen (Check out our Instagram account! It was Mr. B!). Yes, he was preparing a beautiful Christmas eve dinner for the two of us to share.

We started with shrimp cocktails (family tradition), and a homemade French onion soup. Then for the main we enjoyed medium cooked steaks that were served with a green pepper sauce, accompanied by a side of salted boiled potatoes and broccoli. Yep. Adult Christmas IS just as good as it was being a kid.

Dinner was only the beginning… this man, the man that I married, then so thoughtfully wrapped up every single unopened package that was mailed from our family and friends for Christmas so that I’d feel that they were with us more so on Christmas morning. YES, 100% truth! These neatly wrapped packages were nestled under our tree with color codes that he explained identified the person it was from. Still words cannot express just how special he made this Christmas eve for me.

Still wordless… Thank you Mr. B. Thank you!

Making Latkes

Latkes, potato pancakes, or potato cakes as we know them in central Pennsylvania, are a traditional meal for Hanukkah. I thought this would be a perfect post for this time of the season, besides… tonight I had a craving for some good old potato cakes. I’d like to publicly acknowledge and blame my fellow Instagramers for that craving…Thanks guys for all of your recent delicious photos! So we whipped up a non-traditional form of a potato cake using sweet potatoes from a recipe out of my Forest Feast Cookbook.

As we made the cakes, of course we had some inappropriate banter and jokes between us, but we also really reminisced about the first time I ever tried potato pancakes. Yes, it was actually when I first started dating Mr. B. I was sitting in his parents kitchen and we were discussing potato cakes and I believe I happened to mention that I’d never tried one before. Gasp!? I know..talk about sheltered. Well Mr.B’s mother decided right then and there that I had to try one. She immediately started whipping out potatoes, crisco, onions, etc. and made them on the spot! What a woman my mother in-law!

You won’t find any crisco in the version we made tonight, but I do believe that these potato cakes we made would make my mother in-law proud. The entire time I scarfed down my two potato cakes I couldn’t help but think of her with each bite. ‘Tis the season and all that nostalgic stuff, right?

We didn’t change a thing in the recipe. We paired the potato cakes with a nice piece of mahi mahi. It hit this homegirls spot and there were no complaints from the Mr. Victory in my book!

Sweet Potato Latkes

Grate 2 sweet potatoes (I don’t bother peeling).

Combine with:

4 beaten eggs
1 clove minced garlic
1 Tablespoon bread crumbs
Salt & Pepper

Fry:

3 Tablespoon heaps (forming patties) in a generous amount of olive oil until golden brown. About 3 min each side on med/high. Remove & drain on paper towels.

Serve with a dollop of Greek yogurt & a sprinkle of chopped scallions.
